Mornin' all! This is my second day back to work, last day to work for the week and I will just say thank God for Saturdays! Hubby and baby survived their first day without me yesterday. He did so awesome with him. The house was clean, the lawn was mowed, the baby was happy! It's just my husband didn't eat all day. Imagine that! Forgetting to eat with a baby in the house

I need a good recipe for mashy. Something that I can understand what the ingredients are. My hubby is dying for mashy and we almost went to eat at Med. Restaurant looked at the menu and two pieces of mashy was 2.75. he freaked! So if anybody can be a really good sport and help a woman that is being drove crazy by her husband regarding mashy, I am begging you please do so!!!!!!!!!!!!!!!!!

Everybody have a great Friday! Don't work too hard today!

This is not what the traditional Egyptian mashi is but I made it for my husband and he LOVED it:

Baked Stuffed Grape Leaves

Ingredients:

Jar of Grape Leaves (I get this big jar and just keep it in the fridge..they're from California)

1 lb ground lamb

1 cup jasmati rice

1/2 onion chopped

2 lemons

1 pinch tarragon

1 tsp Emeril's Southwestern Essence

1 tsp garlic powder

1 tsp onion powder

salt and pepper

*note...I put down 1 tsp for the spices but I just shake until I think it's enough. I think it's "about" 1 tsp...i'm so bad at that!!)

Preheat oven to 350 degrees and spray a casserole dish with olive oil spray.

Cook the rice and cool according to package instructions and let cool. (normally boil 1 cup rice to 2 cups water, simmer for 20 minutes)

Mix in a medium bowl, ground lamb, spices, chopped onion and cooled rice.

Lay out the grapeleaves, vein side up on a large surface area. Cut the stem with a kitchen knife so nothing is protruding from the leave.

Take about a tablespoon of the mixture and put it on the part of the leaf the stem was that you cut off. Roll up, folding sides as you roll and place in casserole dish.

continue until you run out of the mixture.

Pour the juice of the 2 lemons over the stuffed grape leaves.

Cover casserole dish and put in oven for 1 1/2 hours.

Enjoy!

Also, has he craved koshari yet? LOL my husband asked me the other day "when will we have the koshari?". LOL I"m like, whenever you want, there's no set menu in this house!!! I made it and it went over so well he brought some leftovers to an Egyptian friend of his down the street who's from Alexandria and he loved it too! I think Moody gave me the recipe. I don't have it online saved and I don't have time to type it all out but maybe moody has it still. It's REALLY good and now I"m craving it again. Super easy to make too except if you use real onions. I usually cheat and get the French onions in the can but when I made it for him I made them myself. I actually prefer the canned kind because they're more crunchy but that's just me.

I have sneezed 23 times so far today. I hate spring allergies...takes some of the joy of spring away!!! We were going to do a Duck boat tour tomorrow but it's so soggy here this weekend I don't know if it's the best time to do it so I"m going to look and see what's showing at the Omni theaters and we'll do that instead, maybe at the aquarium or the museum of science. I love seeing the penguins at the aquarium! :luv:

On my way to Gainsville for daughters graduation, keep your fingers crossed I don't end up in jail for some kind of violence against my ex-husband, and his wicked evil mother. The stories I will tell will be priceless. Have a great day my good friends.
