My fiancee can't get an apartment of her own until she knows my visa is approved because we're going half/half with the rent, so when it comes to saying which address I'll be staying at what do I say? I could say the address of one of her close friends or her current home address but I wont be staying there, so do I just tell them she'll be getting an apartment once my visa is actually approved?

I think it says to provide the "address in the United States where your fiance(e) intends to live", says nothing about WILL live ... and people move and change addresses all the time for many reasons, so not to worry.

YMMV
