We have completed the K-1 visa process and we're married. We don't know what to do next. Does my wife go get her SSN now? What do we start on?

apply for AOS, SSN, drivers license, add joint bank account, joint lease etc etc.

Congratulatins - The AOS process is easier than the K1 (since you have done all the paperwork before) The G325a is similar (with a new name, address, work history etc.) the I864 is similar to the I134 (just longer); the I485 is similar to I129f but filled by the non-USC. Good Luck

after reading guides, start getting all documents ready, get certified copies of marriage certificate and go on......

you will apply for AOS, EAD if you want, AP if you need it.

if you didnt apply for SSC probably you will have to wait till you get your EAD, and some states the ss number is necessary for drivers licence
