i cannot contain my excitement for everyone today...3 visas from Cairo-ayesha and bridget and my hubster's...wahrania's visa from Algeria!!!!! :dance: it is a beautiful day el hamdulillah!! :) keep the visas rollinnnnnnnnnnnnng for all those waiting!! inshAllah your time is soon! i am praying and praying!!! :):dance:

Timeline

Now my new stress (in addition to my old ones minus waiting for isavey) is what to cook for breakfast for him!!! I already have my dinners lined up and ready to go that I want to make but he's so used to eating fuul or this other thing that is like a spicy fried ball that you put in pita with mayo and lettuce I"m not sure if he'll like what I normally have which is either scrambled eggs or omelettes. Maybe the first morning I'll do a HUGE brunch like thing and people (just family) can stop in and grab a little of this and a little of that and he can tell me after what he liked the best.

:) do you mean falafel--in egypt they call it taa'meya? you can find that here...i can probably get you a recipe from my mom....she usually makes it then packs it into little bags in the freezer...then, you just take one out at night and pop it in the fridge....it's pretty easy to make..and fuul (fava beans) is available here..in cans..you can get it at any international store, i think..

Yeah those are the two I mean. He said he'll teach me how to do the fuul so I'll wait for that lesson and the falafal recipe would be great! What do you normally have for breakfast? When we were together the last time he'd go buy me a falafal sammich which was ok but then again we were waking up at like 3 or 4pm so my whole system of needing eggs and coffee was out of whack. lol I don't think I could have that for breakfast now so I guess I'll be cooking three different ones, one for the kids (pancakes or french toast) one for me and one for him .

they make some really good falafel in a box that u just add water, let sit for 20 to 30 minutes, then mold into balls and either deep fry them or bake them. they are reeeeeeeally easy and hubster actually will eat those without complaining. They're not too terribly expensive either and 1 box makes enough for like 12 people OR MORE

fava beans (fuul) u heat up on the stove, add a little olive oil... hubster likes salt and pepper ... I think that's all he does.

...well, with school and everything, i don't get more than a cup of coffee and a cereal bar or something...lol..especially with the whole weight loss issue....as for my husband...breakfast is basically, fuul, falafel, scrambled eggs, feta cheese with tomatoes and/or cucumbers, etc....i'm trying to think of the most authentic egyptian breakfast, lol...hmm...they also like this thing called eshta...i guess the closest thing to it here is sour cream....honey is also another thing they like, they eat it with bread....the sour cream and honey are usually together at the table....oh! good, soft, white pita is essential..haha...all these things aren't alwayyys at the table together, just a mixture....um...i know my husband really likes greens, so he appreciates a platter of watercress, parsley, coriander, etc....yeah, it's weird--but he likes eating it fresh like that...haha..if i think of anything else, i'll let you know...and i'll get that falafel recipe to you asap, insha allah... :)

I am going stir crazy today. I have all this nervous energy and complete lack of desire to do anything that remotely resembles productivity...what's a girl to do? :whistle:

yeah, i've tried it from the box...but personally, i like the fresh one more...i've watched my mom make it and it just looks so...fresh...lol...we never made fuul from scratch...i'm not sure how that's done...but with the can, we just heat it up on the stove in a little pot, add olive oil, salt, a little pepper, some cumin, and depending on your taste, some tomatoes and greens...some people like to add a little tahina--i think that's sesame paste--not too sure...
