At what point(s) in the process will mail be sent to my fiancee (the beneficiary)?

Beneficiary will only get mail once petition has been approved by USCIS and file transferred to beneficiary's embassy

she will get the checklist of stuff she has to bring to embassy and an appointment time.

Once you have recieved your NOA 2 then you should mail her an exact copy of your NOA 2, poof of the relationship, and I-134 documentation.
