I made a coconut ice cream:

Part I:

in a pot mix and stir until it thickens:

- 3 egg yolks

- 1 can sweetend condensed milk

- 1 can milk (use same can of condensed milk to measure)

- 1 tsp coconut extract (not really necessary, but it gives a special taste)

set aside and let it cool off.

Part II:

- 3 egg whites

- 3 tbsp sugar

- 1 can media crema (mexican cream similiar to table cream)

whip the egg whites until it's firm. add 3 tbsp of sugar (or less so it won't be too sweet) and 1 can of media crema.

Mix both Part I and II, add 1 to 2 cups of grated coconut, stir. Put in a 8x8'' dish. Freeze it overnight and voila!

yummy too :thumbs: i'll take the above over blue bell ice cream any day.

I guess these could be considered a milk recipe...

I made pop up pancakes for breakfast this morning and served them with syrup.. mmm they were yummy... they are somewhat similar to Yorkshire puddings..

Pop Up Pancake Recipe - makes 24 muffins or fills a 9×13 baking pan

* 1 cup milk

* 1 cup flour

* 6 eggs

* 1/4 cup melted butter

* dash salt

Preheat oven at 400*

I like to blend all the ingredients in my blender. I have tried to whisk it or even use the electic mixer, but it seems to get the most smooth with a blender. Then grease your muffin tins or baking pan. My mom likes to bake these in a jelly roll pan.

Bake them for 15 minutes, or until puffy and golden on top. Use a knife to pry them out, hopefully they were greased well enough and should pop right out.

Now they are ready for toppings. I love syrup, powdered sugar, and fruit. We usually load it all on and dive in. What do you use to top your pancakes with? Maybe peanut butter or honey?

I was just about to ask if they are like Yorkshire puddings (yum!), but then read your comment on the recipe page :D And nw I also read your post and see you mentioned them there as well. I need to work on my attention span :bonk:

yes you must... :P:lol:

they are similar to yorkshire's but with the pop up pancakes you don't preheat the pans and dump oil in them before adding the batter...

next time I want to try them with some strawberries and cool whip...
