I have pretty bad carpal tunnel so I'm surprised they turned out as good as they did with all the piping involved. My hand/wrist has hurt all week. I can't grip anything dammit!

Amber those cakes look awesome! Sorry about your carpal tunnel. I have it too from all my years of typing and counting money. It's very frustrating sometimes when you're trying to get a hold of something and can't. :devil::lol:

Thanks booty! She was so excited. From Thursday on all she could talk about was "my mickey cake" this and "my mickey cake" that. She's kinda mickey/minnie obsessed. My mom said she wanted to take pics to work to show people because they'd want to order them. I said no freaking way! Then, my grandma was like "what? you don't want to make extra money? shame on you!" They'd want to pay like $9 for one and then complain when I would tell them $50. The freaking ingredients alone were more than $9.

Timeline

I made a coconut ice cream:

Part I:

in a pot mix and stir until it thickens:

- 3 egg yolks

- 1 can sweetend condensed milk

- 1 can milk (use same can of condensed milk to measure)

- 1 tsp coconut extract (not really necessary, but it gives a special taste)

set aside and let it cool off.

Part II:

- 3 egg whites

- 3 tbsp sugar

- 1 can media crema (mexican cream similiar to table cream)

whip the egg whites until it's firm. add 3 tbsp of sugar (or less so it won't be too sweet) and 1 can of media crema.

Mix both Part I and II, add 1 to 2 cups of grated coconut, stir. Put in a 8x8'' dish. Freeze it overnight and voila!
