yeah for some reason banana and chocolate are sooo good together...

i think banana boats are something you do when you are in Girl Scouts.. I wasn't in Girl Scouts but one year at family camp they made them and I have been hooked ever since...

I'm still not sure what to make. I don't really feel like trying the banana cake, cuz I've never done it before and everytime I try to bake a new cake recipe I screw up :lol:

Maybe I'll just make banana jam, which is a mix of banana, orange juice, sugar, cinnamon and clove. It's cooked low heat in a non stick pan or pot, for a long time. Then we eat that with pancakes :D

I just made penne bolognese and it was so yummy, I had to share.

I made it with only a little bit of minced meat and added red pepper and carrots. It was really good!

I am making coconut banana pancakes with strawberries for our banana project tomorrow. Let's see how that goes!

So here are my Coconut Banana pancakes topped with strawberries and non dairy, low fat whipped cream with a bit of sugar-beet syrup (it's hard to find American style syrup over here).

I used 1 cup of whole wheat flour, mixed it with a pinch of salt, 2 teaspoons of sugar and 1/2 teaspoon of baking powder. In another bowl, I mixed 1 cup of coconut milk (creamy) with an egg and 1 teaspoon of melted butter and mixed it with the flour afterwards. I mashed one riped banana with a litte bit of lemon juice and added that to the batter as well. Let it sit for 20 minutes and then baked the pancakes. I put some banana slices on top of the pancake while baking them.

They turned out ok, but I can't taste the coconut really. It's the whole wheat flour's fault, it tastes too strong.

Timeline

the brazilian style pancakes would be pretty much like a huge caneloni. You just make a dough mix with oil, milk, flour, egg, etc, then you make the pancakes, that charles would say they're like burritos. Then the filling you can make anything, I usually either make the chicken curry (that has chicken breast, spices, onions, etc, cinnamon and curry, sometimes coconut if I feel like) or I make the beef filling which would be ground beef coocked with the usual peppers, onions, garlic, spices, until it's very brownish and crunchy. Then that time I also decided to make a tomato sauce from scratch that was pretty much tomatoes (no skin no seeds) and spices, pepper, basil, garlic, oregano, etc.

simple stuff.

today i'll be making that ground beef again. I was going to make gnocchi, cuz we were talking so much about it, but it takes so long so i'll just make mashed potatoes with loads of garlics and the ground beef. :D
