Ok, made my French Onion Soup...

1. Sauteed 3 cups of a mixture of yellow, white and red onions, and a couple of shallots in 1/4 cup of margarine and 1 tbsp of olive oil. I sauteed them on a medium low heat for about 30 minutes, stirring occasionally, until they were soft and translucent, but I didn't let them get brown.

2. I added about 1 tbsp of flour to the onion mixture, stirring for about 2 minutes. Then, to the pot, I added 4 cups of beef stock, 1/4 cup of white wine (although you can also use sherry or red wine), pepper (salt if you like, but the stock had enough salt in it for my taste), bay leaf and allspice.

3. While that was cooking for about 30 minutes, I sliced a demi-baguette into one inch slices and lightly toasted them.

4. I put the slices of bread in the bowls and ladled the onion soup over the them.

5. On top of the soup I put swiss cheese slices, slightly letting them hang over the edge.

6. The next step would preferrably be done in a broiler, which I don't have, or a larger toaster oven than I have, so it doesn't take as long, but I popped the bowls of soup in a 450 degree oven to melt and bubble the cheese on top.

Careful though...the soup comes out boiling and the cheese MOLTEN! hehehe... it's so good though....

I've made several onion dishes but haven't remembered to take pictures of them. I made pork and onion tacos the other night. Last night I made roast with onions, potatoes, carrots, and celery. The tacos actually weren't picture worthy. The roast was but I forgot. :blush:

Just couldn't stay my @ss away!
