Nessa, here is the spinach souffle recipe...finally... this is a lower fat recipe made with skim milk, but if you want a richer recipe you can use cream.

Ingredients

1/4 cup chopped onions

1 tablespoon butter or margarine

3 eggs, separated

1 to 2 cups chopped spinach, cooked and drained (I use fresh, but frozen can be used)

1/3 cup parmesan cheese, grated

2 tablespoons butter or margarine

2 tablespoons flour

1 cup skim milk

Salt & pepper to taste

Preparation

Preheat oven to 350 degrees.

In small skillet saute onion in 1 tablespoon of butter. In larger saucepan for white sauce, melt 2 tablespoons butter, stir in flour and heat until bubbly. Gradually add milk or cream, stirring constantly; cook 1-2 minutes. Season with salt and pepper.

Steam spinach 1-2 minutes. If creamy soufflé is desired chop spinach in blender. Beat egg yolks until thick and lemon-colored. Stir into hot white sauce along with spinach, onions, and cheese. Fold in egg whites beaten until stiff, not dry, peaks are formed; turn into greased 1 1/2 qt casserole.

Set in pan of hot water and bake about 50 minutes.

Now, a question about your mayo....how much raw egg yolk to cooked egg yolk and could the mixing be done in a blender? That looks really yummy!

i made chicken tortilla soup and I am in the middle of waiting for my bread dough in the bread machine... when it is done I will take the dough out and throw it in a pan and then let it rise and then bake it and then eat it... yum yum!!

the soup came out good but it got really thick so i added a bit more water and spices... I don't mind it thick but hubby doesn't like soups too thick... :P

I'd like to play but it's hard because Suj is a vegetarian. I haven't cooked a beef or pork meal since getting married. Chicken once in awhile I make for myself. Fish is extremely rare. Mostly it's vegetarian dinners, I eat meat during the day. But I am getting more into cooking again since life has settled down a little.

I made this last night.

Aloo gobhi matar (Potatoes, cauliflower, and peas with Indian spices)

Also has red onion and cumin seeds. Cilantro on top.

Naan bread on the side and some mint chutney. (naan and chutney store bought...)
