give me the souffle recipe

so potato it is. I'll either decide on fish or pork for this weekend then. And potato, of course.

This is actually a low-fat souffle recipe and what's here are leftovers  from another meal. That's why they are a bit of a lump and not a nice square...hehe.

I'll post the recipe when I get home.

I like sweet potato for a change. I like to make sweet potato fries, sprinkled with rosemary and baked in the oven. And sometimes mashed sweet potatoes make a nice change as well. I don't do the whole Thanksgiving baked with marshmallows thang....eeew. Also, if I'm not mistaken, sweet potatoes are high in certain vitamins, beta carotene, and potassium.....I think.

Sweet potatoes have less carbs and starches than regular potatoes. I "try" to do the south beach diet and it tells you to stay away from potatoes and do sweet potatoes. I haven't had a regular potato, except for the occasional fry here and there, in years. I eat a sweet potato about once a week.

Just couldn't stay my @ss away!

i actually made a potato dish last night just because... I wasn't even thinking about this thread ...lol I didn't take a pic though... I served it with some marinated chicken drumsticks that I also barbecued...

I made this...

we usually wrap them in foil and do them on the BBQ but I have also layered them in a casserole dish and baked in the oven....

Two Potato Packet

2 medium sweet potatoes

4 small red potatoes, thinly sliced

1 medium sized onion, chopped

2 tablespoons margarine or butter, cut into small pieces

4 small sprigs of fresh rosemary, basil or oregano (I have used dried too, works just as good)

Salt

Pepper

1/2 cup shredded smoked provolone or Gouda cheese (I have used mozzarella cheese and it works too)

Fold four 24x18 inch pieces of aluminum foil in half to make 18x12 inch rectangles. Divide sweet potatoes and red potatoes among the foil rectangles, alternating and overlapping the slices. Top with onion, margarine, herbs, slat and pepper.

Bring up opposite edges of the foil and seal with a double fold. Fold remaining edges together to completely enclose vegetables, leaving space for steam to build.

Grill on BBQ until potatoes are tender. Remove packets from grill. Open packets and sprinkle with cheese. Let stand for 1 to 2 minutes or until cheese is melted

Here is my steak dish from last night.

100_2039.jpg

oh wow, that's a huge steak.

I hope this weekend's weather is good so we can grill both Saturday and Sunday outside. I plan on making ribeye one day with bratwurst (one of those protein only days) and pork loin with roasted potato the other day.

Thanks! I like it too but I'm wondering if maybe it's time for a change again. Of course, it took me forever to decide on Bootylicious so it would probably take me forever to decide on another name also,

here we go:

ribeyepotatosaladbrats.jpg

ribeye steak, potato salad, brats and salad (lettuce, onion, spices, olive oil, etc). My potato salad is the only one Charles eats and he loves it. He doesn't eat anybody else's potato salad. I boil the potatos, let it cool, in a bowl mix a raw egg yolk with a cooked egg yolk, mix non stop adding mazola little by little, stiring non stop then some lime juice, salt and pepper until it thickens and becomes mayo.

the picture is not the best, but oh well.
