Anyone here a fan of Asparagus? I make a mean Asparagus cream soup!

Will supply recipe if need be!

Here is my story. I've lived problem free life, payed my taxes. One day I decided to marry this girl. But to do so would require her to come to US of A, and so it started. My problem free live turned in to free problems from USCIS! Sure things turned to unsure, certain dates turned to aproximation within months. All logical thinking was out the door, as I filed my papers withing famous Vermont Centre!

This is great tasting soup. For it you'll need.

NOTE: This is estimate, what I usually use.

Beef Broth, 6 cups (either use cubes or real beef broth)

About 2 packs of Asparagus. (I believe each pack is 2lbs)(make sure to wash it and break off the roots before use)

The Greens:

Scallions 4-5 green scallions chopped

Onion: 1/2 chopped

Italian Parsley: Table spoon of choped (FRESH)

Orange Peels from half of orange (about 35g of Orange juice(optional)

Few cloves of Garlic (not too mucH)

Spices : Salt/Pepper, Tarragon,

Oil : Olive 1/4 cup

Dash of Louisinna hot sauce(Tabasco etc...)

Okay you'll need to grill(grilling is important it gives it more flavor than baking of frying) the Asparagus after its been washed and cut. Grill it until it softens and its ok if it burns a bit. Just dont Charcoal it!! :) Next you need to make your orange paste, Take orange peels, and blend it together with OJ. Next In Large frying Pan put Olive oil, and heat on Medium. Take Garlic and start sauteing it(u can cut it small or use garlic masher). DO NOT BURN THE GARLIC :). In about a minute add dash of hot sauce, and add in all the greens, Scallions, Onion, Italian Parsley. Sautee for about 15 mins on med-Low fire. Now add the Orange paste. Sautee for another minute or more. Add the spices. Now, take asparagus and chop it up. You should have 3 things. Soup Broth, Green Sauteed Veggies, and Chopped up Grilled Asparagus. Prepare a Large empty soup pot. Also take a third of each ingredients and place in Blender/mixer. Blend and pour in soup pot. Now do the same with the rest. And woolah! Now stir the soup add a touch of white wine and enjoy!

Let me know if anyone likes it, any questions pm me :)

I used a new recipe I found online instead of my old stand by so I wasn't happy with it. Of course, it tastes great but I'd rather have a fluffier cake than the way this one turned out. It's really dense. I think fluffier cakes soak up the milk better and just make for a better pastel de tres leches. I didn't have time to take a pic of it before Javi cut into it. It must not be too bad though because he managed to eat two pieces of it last night after I got the icing on it around 9.

I made an apple pie today.... will try and remember to take a pic when it is done....

Easy As Pie No Roll Pie Crust

1 1/2 cups flour

1 teaspoon salt

2 tablespoons sugar

1/2 cup oil

2 tablespoons cold milk

1. Sift together flour, salt and sugar right into pie plate.

2. Beat together oil and milk and pour over the flour mixture.

3. Quickly mix with a fork just enough to moisten flour.

4. Press into pie plate, ####### all over with a fork and bake at 425° for 15 minutes.

********************************************

Apple Pie Filling

5 1/2 cups peeled, cored and sliced cooking apples

1 tablespoon lemon juice

1/4 cup white sugar

1/2 cup brown sugar

3 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

Mix all together...

*if you use a sweet apple you might want to reduce the sugar....

****************************************************

Oatmeal Crumb Topping for Pies

1/2 cup butter

1 cup brown sugar

3/4 cup flour

3/4 cup oatmeal (any type but instant)

1/2 teaspoon cinnamon

1/4 teaspoon salt

1. In a large mixing bowl combine all the ingredients except the butter.

2. Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.

3. Spread crumbs over prepared fruit mixture of your favorite fruit pie.

4. Do NOT add top crust.

5. Bake as directed in your fruit pie recipe.

6. If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.

7. Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.

* I did only half a recipe of the crumbs and it was plenty...
