Hello guys, I just actually took the time to read this thread and decided to join, so here is my zucchini-beef casserole (before cooking, cooked right out of the oven, sliced on the plate...) that I made earlier today It was really good, hubby is still eating as I type

This is the original recipe, but I changed it a bit to match what I actually had available at home (too lazy to go to the store )

BEEF & ZUCCHINI CASSEROLE

4-5 c. unpeeled zucchini, sliced

2 tbsp. butter

1/2 c. chopped onion

1/2 tsp. salt

1 1/4 lb. ground beef

1/2 lb. processed cheese, sliced (I used shredded mild cheddar cheese instead)

1 (10 1/2 oz.) can cream of mushroom soup

1/2 c. buttered bread crumbs (I used Pepperidge Farm herb seasond stuffing because I had some leftover)

Melt butter in a skillet. Add onion, salt and meat. Cook until lightly browned. Place a layer of sliced zucchini in a buttered 2 1/2 quart casserole dish. Cover with a layer of meat mixture, then a layer of cheese. Cover with half of soup. Repeat layers and remaining soup. Sprinkle bread crumbs over soup. Bake, uncovered, at 350 degrees for 1 hour.

The classic original Italian recipe is made with Marsala wine.

I thought Wild Turkey is bourbon.

Anyway... you should be able to find marscapone at a regular grocery store....in specialty cheeses though, not next to Kraft singles... LOL.

The grocery stores around here all carry mascarpone, it is usually in the "gourmet" cheese section.

Yes :star:I wouldn't know what else could be used, because that's how it is made...you can also do it without liquor btw and it still tastes great.
