How to make Quark

It does sound a bit gross, but maybe you should give it a shot!

hmmm, is scares me a bit, but maybe I will... my FIL loves Quark and I'd love to have some for him when the inlaws are here in June.

Here's another one for you Ms Squirrel....what do I do with Grunkern....I know that isn't spelled right, but that's close. I think it's like spelt, but I don't have a clue how to make it. My MIL brought some of it back from Germany for us last year.

Yes, it's spelt wheat- really yum.

You can make Grünkernbratling - veggie patties

Grind the Grünkern coarsly (I think you need a special grinder for it...I am not sure though). Boil vegetable stock (just use a cube), add the Grünkern, let it boil for 30 secs and then take off the stove and let it soak for 10 minutes. Dice onions and sautee in a pan with a bit of oil. Mix an egg wirh salt, pepper and chopped parsely, add the sauteed onions. Add that to the drained, soaked Grünkern. Mix together, form little patties and fry them.

If the dough is too moist, add some flour or some oats if you like. You can also add all kinds of veggies to the patties - carrot, courgette, mushroom etc. but sautee them with the onion.

It's a nice veggie dish - especially dipped in tzatziki! :thumbs:

Oh, measures - 250g grünkern, 2 eggs, 1 medium onion :P

What I also really like are potato fritters - grind the potatos, mix with sauteed onion, egg and flour and fry them. We eat them with applesauce - deelish!

I was married to a vegetarian, so I am a neverending source of veggie recipes!

My gran made the best potato pancakes (I'm sure the same thing as your fritters or latkes). Yum with applesauce or sour cream...

Trader Joes and I wouldn't be surprised if Whole Foods has them. I also got them a long time ago from one of the Brit online foodie shops
