Hi,

I'm not sure of which address I need to use on all the documents needed for the K-1 visa and letter of intent etc.

My fiance gets his postal mail at a different address ( A Catholic parish address) than his physical residency address, ( b/c postal service is not reliable at physical residency address) so which address do I need to put on all documents involved?

I'm concerned that if I put 2 different address they may question this. Please advice.

As far as the statement of intent goes, no address at all is needed - for either the writer or the recipient.

Read the forms carefully - for some questions a residence address is required, for some questions a mailing address is acceptable. You may have to determine which from the context of the question.
