Parsley is pretty amazing stuff also. There are all kinds of health benefits from eating it. It's pretty nice if you add it to fruit smoothies. I know that sounds wierd but it's actually good.

Celery is essential to a lot of soups and interestingly, celery leaves impart more flavour.

Nobody tried the celery osmosis? It works with all kinds of roots/stalks however, if you can grow stuff and leave it in the garden until just before you use it, that's entirely the best way to do it.
