nope and it sucks massively!!!!!!!!!! my sister asked me to take her dog for a walk with her today since she can't really walk him because he yanks and he weighs almost as much as she does. I think I'll do it hopefully getting out will make me feel better. I was out most of the day yesterday and it just made me feel run down. I hate sinus infections!!!!!!

yeah I think that's what I decided too. off to the post office to mail some stuff I sold on ebay. then to the grocery store to buy some sesame oil and then the movie store to rent the kite runner. I'll be back later if my sister doesn't drag me on the dog walk :)

Slow Cooker Lemon Garlic Chicken II

INGREDIENTS:

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon ground black pepper

2 pounds skinless, boneless chicken breast halves

2 tablespoons butter

1/4 cup water

3 tablespoons fresh lemon juice

2 cloves garlic, minced

1 teaspoon chicken bouillon granules

1 teaspoon chopped fresh parsley

DIRECTIONS:

1. In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.

2. In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.

3. Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

sounds delicious, Marilyn, that's the kind of cooking I do. Depending on my diet I'd probably replace the 2 tbsp of butter (that's 200 calories) for 1 tbsp of olive oil that's way healthier or cooking spray butter flavor if I wanted it really light.

oh, and I'd probably pressure cook it, in like 20-30 minutes instead of slow, but that's because I've never slow cooked anything, so I dunno if it would make it taste better.

also I'd not use salt at all, since it has too much sodium, I'd increase the chicken bouillon.

oh, and I'd put some cumin when seasoning the chicken. Ok, I'll shut up now, I keep adjusting it to my taste :P

I don't have any olive oil at the moment but I might use the cooking spray....

slow cookers rock :thumbs: you can just throw stuff in and forget about it...

I am thinking of adding some carrots to it.... might steam the carrots a bit first or they might not get cooked before the chicken is cooked...

Yeah I've read that when you cook meat slowly it gets more tender. I just don't have the patience to wait 6 hours for anything to cook, unless it's Christmas and I'm cooking turkey. I love using my pressure cooker. Saves time and lectricity :P

I don't like cooked carrots usually I only eat them raw or I use just a little bit when I make vegetable soup. They add some great nutritional value to the food, though.

good mid morning almost afternoon everyone! I slept sooooo late today because I'm sick. It was nice but I still feel like #######. the weather outside is beautiful so I think I will try to spend some time outside today and get fresh air hoping that will make me feel better. i forgot to turn my humidifier on low last night before I went to sleep and now the walls in our bedroom are wet! I really really really hope I get it dry because that was stupid of me. Great condition for mold to grow. just what I need to make me get well quicker. UGH!!!! I have a fan on high pointing at the wall. it looks like it is drying.

you dinner looks fab julie. since it's so warm outside I'm going to grill some tilapia that I plan on marinating garlic, ginger, green onion, soy sauce & sesame oil for about 15-20 minutes. have it with a napa cabbage & snow pea salad and maybe a little rice. I'm also going to put some whole mushrooms in foil with salt and pepper and a few sprays of the spray butter on the grill to cook just because I love them so much.

Sorry to hear you still feel poorly! I have a pharyngitis and feel a bit ####### too. It's been snowing all day and all I wanted was to snuggle up on my sofa, but I had to go and hang around the office (where there's fukc all to do all day).

Your lunch idea sounds fab-o! Oh, how I love good food!

I had prawn and veggie stir fry with brown rice (remember, it's diet time for me now) for dinner. Organic prawns, carrots, snow peas, red pepper, chili, fresh ginger, spring onions and garlic, fried with sesame oil and finished with soy sauce and honey. It was really nice. And incl. the rice only 6 Weightwatchers points.

Of course I had to take a photo of it - I am so addicted to taking photos, I can't help it. Not as pretty as last night's dinner, but yummy anyway :)

but that is the beauty of a slow cooker you can put the stuff in before you leave for the day and when you get home your dinner is ready :thumbs:
