Cheesecake

2lb cream cheese (4 bricks)

10oz sugar

8 egg yolks

5oz heavy cream

2t vanilla

2t lemon juice

cream sugar and butter (I usually do it for like 10 minutes), add in yolks one at a time, add cream, vanilla, lemon juice. bake in a water bath at 325 for 75 minutes. Turn off the oven and then leave the cheesecake in there to finish setting while the oven is cooling off for about another hour. This recipe makes 2 9-10" cheesecakes

Adel's no-Bake Cheesecake

1/2 cup melted margarine

2 1/4 cups graham crumbs

1/2 cup brown sugar

1 envelope Dream Whip (follow directions)

1 - 8 ounce cream cheese, softened

1/2 teaspoon vanilla

1 cup icing sugar

1 can pie filling

Mix margarine, brown sugar and graham crumbs together and press into a 8 by 8 inch square dish and then refrigerate. Prepare Dream whip as on envelope, add cream cheese, vanilla, icing sugar and beat until fluffy. Spread mixture over refrigerated crust and refrigerate until set, about 4 hours. Then add pie filling on top and let set until ready to serve.
