Chicken Meatloaf

I haven't looked online yet but I was curious if anyone has tried a recipe for meatloaf using ground chicken that think they is good. I don't want to have to add any extra fat to it for it to be moist enough to substitutions are good. Anyone?

I found a recipe on the Food Network from Barefoot Contessa for a Turkey Meatloaf, I'm sure you can substitue chicken and use Pam spray to saute the veggies if you want to omit the olive oil.

Turkey Meatloaf

3 cups chopped yellow onions (2 large onions)

2 tablespoons good olive oil

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

1 teaspoon fresh thyme leaves (1/2 teaspoon dried)

1/3 cup Worcestershire sauce

3/4 cup chicken stock

1 1/2 teaspoons tomato paste

5 pounds ground turkey breast

1 1/2 cups plain dry bread crumbs

3 extra-large eggs, beaten

3/4 cup ketchup

Preheat oven to 325 degrees F.

In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.

Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

VJ Hours - I am available M-F from 10am - 5pm PST. I will occasionaly put in some OT for a fairly good poo slinging thread or a donut.

I have all of that except for thyme. that sucks so bad cos I just threw the thyme away like 5hrs ago! maybe I have some dry

Do you have sage or rosemary? I'm sure you can substitue any herb that is to your liking. I think even oregano would be fine if you like that.

I can't remember what's in there...I think only parsley and chives are left. Grocery day is Saturday. I think I will use that recipe I haven't found any that look much better

Parsley is an herb, I'm sure you can use that. Or maybe you can omit it all together. Do you have any seasonings? Maybe italian?

I think I probably have every single dry herb imaginable but I prefer to use fresh ones. Dry ones tend to overpower things even when you use small amounts. I think I'm going to go with this and then add some herbs and stuff after I look in the fridge

1lb chicken

1/2c breadcrumbs

1 egg white

1 carrot

1 small onion

1/4c ketchup

1/2t minced garlic

1t worcestershire

1/4t celery seeds

1t salt

1/8t pepper

but I will do some other spices once I get in there and look around. let you know what I used and how it worked out!

I ended up taking this chicken meatloaf in a completely different direction...going to try to recreate it the best I can because I started throwing stuff in there without measuring it

1lb ground chicken

3/4c parmesan breadcrumbs

1/4c egg white

1 onion (saute)

1/4c marinara sauce

1 garlic clove (minced)

1t salt

1/2t pepper

2t italian herb marinade (was from a packet marinade I think durkee?)

1t parsley

1t oregano

3T parmigiano reggiano cheese

pinch of onion powder

ok I *think* that is all I put in there :lol:

made into six small meatloaves each 4.25oz and baked in muffin pan

put a small dent in top of each meatloaf and 1/2t marinara sauce and then topped with a pinch of parmesan

baked at 350 for 25 minutes

it actually turned out pretty good not sure if Neil will eat it or not

I liked that recipe. I might try it. I always see ground turkey but I never buy it. 3/4 cup chicken stock - can I use those maggi (or knorr) chicken bouillon instead?
