Do I need to submit evidence such as joint bank accounts and lease agreements with AOS paperwork, or will they need that evidence later? Just want to be sure!! Thanks!!

That will only be required at the time of AOS interview - if you have one. Lots of folks (myself included) have their AOS cases transferred to the California Service Center and are approved w/out interview.

We followed the AOS guide to the letter, and the guide, as well as I-485 directions DO Not ask for any relationship evidence other than a copy of marriage cert.
