copied this from say anything thread hoping more people will see it...

anyone have a good recipe to make banana bread with substitutions? for example using splenda instead of sugar, egg whites instead of whole eggs, wheat flour instead of flour, applesauce instead of butter or oil? I'm pretty sure I have all of those things in my house. just wondered if anyone had a recipe that they have tested before I go experimenting

i'd say, do the original recipe.. but make smaller portions.. et voila.. u don't have to eat the whole loaf of banana bread just cuz u baked it

yeah, like I mentioned in the other thread.. I tired to mes with it and it didn't turn out good...

you really need to use butter or oil or the consistency of the bread is weird... or at least maybe half butter, half applesauce or something like that...

the only thing maybe wouldn't affect it that much is if u use splenda for baking..

This is the recipe I've used. Now that you mentioned banana bread....I want some!

INGREDIENTS

3/4 cup SPLENDA® Sugar Blend

3/4 cup flax seed meal

5 ripe bananas, mashed

1/4 cup skim milk

1/4 cup low-fat sour cream

2 teaspoons egg whites

2 cups whole wheat flour

1 teaspoon baking soda

1/2 teaspoon salt

DIRECTIONS

Preheat the oven to 350 degrees F (175 degrees C). Grease and a 9x5 inch loaf pan.

In a medium bowl, mix together the sugar blend, flax meal, bananas, milk, sour cream and egg whites until well blended. Combine the flour, baking soda and salt; stir into the banana mixture until moistened. Spoon into prepared loaf pan.

Bake for 1 hour and 10 minutes in the preheated oven, or until a toothpick inserted into the crown of the loaf comes out clean.

whenever I substitute applesauce for oil, I leave a bit of the oil in the recipe to give the consistency, but not the calories.

I personally dislike Splenda in that stuff made with it has a weird aftertaste.

Wheat flour instead of regular flour may give it an interesting nutty flavour to complement the banana.

I have heard that people have success using an egg substitute like EggBeaters instead of eggs.

But ultimately, I am with pedroh. How about making mini-loaves? :)

I don't plan on eating the entire loaf pedro!!!!!!!!! Mainly I'm just bored because I'm stuck in the house because of the ice and wanted to experiment. I wasn't even really in the mood for eating it I just wanted to bake something.

I think BB is one of the few things you could make with applesauce/etc & it would still taste good, as it's a moist dense bread anyhow.

Let us know how it is!

just popped it into the oven about 5 minutes ago. someone threw away my whole wheat flour :angry: so I had to use regular flour but I added in a little vanilla and a few flax seeds. we'll see how it turns out in about 30 minutes
