We had sausage on a bun with homemade fries. Or, at least, my husband had sausage on a bun with homemade fries. I got caught up in making his lunch for tomorrow (he's working), as well as homemade chicken soup for Monday (he's working late that day) so I never actually got around to eating. Maybe later.

Well at least he is eating well !

We ended up ordering Chilis - Mike picked it up, I just had the grilled chicken with corn on the cob, it was pretty good.

Hmmm. Haven't had Chilis here yet. They just opened one up down the road. I've only eaten there, once, in Springfield, Missouri. Guess I should try it. :lol:

mmm that sounds gooooood!

i've got to start getting organized for david's visit next weekend. i think we're going to have chilean marinated pork chops on saturday night... that's as far as i am with planning. :lol: (come to think of it, maybe cleaning and doing laundry would be in order, too.)

MMMMMM - I'm coming over for dinner! What time should I be there?

Well, Joe is cooking today - his favourite - beans! I think he has lima beans and pintos simmering on the stove. Don't know what else he is having with them cause I'm headed over to Krikit's for lamb!

enchilada casserole

fry up some ground turkey or ground beef, onion and garlic .... Throw in about 2 cups of salsa, a 10 ounce can of enchilada sauce*, and a 14 ounce can of refried beans.. Let that simmer for a few minutes..

then layer some corn tortillas in a sprayed baking dish... (I used about a 9x5 pan) then layer about a 1/3 of the meat sauce and then sprinkle some grated cheese and then another layer of tortillas, another 1/3 of the meat and some more cheese and then another layer of tortillas and the rest of the meat and some cheese... the amount of layers depends on the size of your pan.. the recipe said to use a 9 by 13 inch pan but I figured that would make to much.. I still made the same amount of the meat mixture and I really don't think that would have been enough for 2 layers in the bigger pan ...... I like it better the way I did it because you got more layers of tortilla ....

Cover and bake in the oven for about 20 minutes.. Remove cover and bake for about another 5 minutes...

* I used one of those packets of enchilada mix but silly me didn't read the back and didn't notice that I needed tomato paste to make the sauce.. so I just mixed the water and the spices in a pot and heated it up and then I added some cornstarch to thicken it up.. then I just put about 10 ounces of sauce into the meat mixture..... it actually turned out better this way... it wasn't so strong...

Vegetable curry with rice

Indian Cooking Recipe : Vegetable Curry

Ingredients :

2 cups shelled peas

1 medium-sized cauliflower

½ cup mustard oil

1 tbsp ginger-garlic paste

1 onion (peeled and

ground to a paste)

1 tsp turmeric powder

2 bay leaves

salt to taste

1 tsp cumin seeds

1 tbsp coriander seeds

2 cloves

½" piece of cinnamon

Method :

Grind all the ingredients for the spice paste

Cut the cauliflower into florets.

Heat the oil and fry the onion paste together with the ginger-garlic paste till they are a light golden brown in colour.

Lower the flame and add the bay leaves.

Mix in the cauliflower pieces and the turmeric powder.

Fry over a medium heat till the cauliflower is half cooked and turns a light golden brown.

Lower the flame and mix in the shelled peas and the spice paste and 1½ cups of water.

Cover with a lid and cook over a low flame till the vegetables are cooked.

Serve hot with boiled rice.

This sounds very good Desigal, and I'm going to try and make this later this week! I'm off for a couple of days to a conference and they're feeding us, so no cooking for me! On the weekend we had grilled chicken, salad and potatoes and last night homemade burgers and corn on the cob. Was yummy.

Now that I'm home with my baby I actually get to cook for two people! WOOHOO! I guess that would require some groceries though huh? ~giggles~ I'm going to have to be really creative for lunch and dinner today seeing as how there isn't really all that much in the fridge!

Tonight will be be sloppy joes and a salad!

Last night I rented Harold and Kumar go to Whitecastle. We started craving those little burgers so we paused the movie and I went out and got some.

I laughed so hard at this movie...loved it. There is a new movie out. Harold and Kumar Escape Guatanamo Bay. I'm anxious to see it!

That is why I rented it- we saw the commercials for the new one and Mel hadn't seen it. He loved it. We will definitely go see the new one when it comes.
