Meatloaf with tomato sauce, mashed potatoes and fresh broccoli:-). Had fresh asparagus last night with the roast chicken, shells and cheese and salad. Love fresh asparagus- our patch isn't doing so well this year - it got hard hit last year with a freeze and again this year. The 4th year is supposed to be when it starts to pick up, not when it gets less and we have been so judicious in harvesting the last 3 years so as not to impede its' growth. Ah well.

Sounds wonderful Kathryn! Asparagus is one of my favourite veggies. It's really inexpensive here now!!

I haven't eaten at a Sonic, yet, so I've no idea what that's like. The couple of times I've mentioned it to my husband he's kind of made an it's-not-worth-going-to sound..... kinda like an "unh".... but he did mention that their hotdogs are good.

I have no idea what we're having this evening but I don't really have to put much effort into that thought. My husband is working late this evening, so it'll probably be soup and a sandwich again or something. Unh.

Next time he's working late go to Sonic!

Tonight we went to Applebees. Had the Bourbon Street steak and garlic mashed potatoes and caesar salad. It was pretty good, lots of food, didn't eat all of it.

Then went to Walmart! Nice and friendly, then to sonic for a cranberry juice slushy. weeeeeee

I've only been to Sonic once, but I really enjoyed it! Seemed cheaper than some other FF's as well. They have great drinks too! :thumbs:

I had tomato cheese soup and a grilled cheese sandwich for dinner today...

Mmmmmmm comfort food Marilyn. Do you ever put two slices of cheese on a grilled cheese sandwich? I admit I do. :blush:

Tried to edit my last post to say what I was going to make for dinner, but this site has been hanging for me all morning so I was just about to give up! I'm going to make this recipe that I found in the paper a few weeks ago called Chupacabra Chicken. I'm going to substitute that tough beef I had on the weekend though, and it should be tender after being in the crock-pot. Here's the recipe if anyone's interested.

1 to 2 tbsp. ground cumin, to taste

1 cup all purpose flour, divided

3 to 4 pounds skinless chicken thighs

2 (16ounce) jars salsa or picante sauce, divided (mild, med, or hot)

1 (8 ounce) package frozen corn, thawed

1 (15 ounce) can chili beans

1 (15 ounce) can black beans, undrained

1 cup quick cooking brown rice

Mix cumin into flour.

Place half the chicken into a large plastic bag. Add half of the flour mixture and shake to coat. Transfer chicken to plate then repeat with remaining chicken and flour.

Empty one jar of salsa into slow cooker. Add chicken, then a layer of corn. Make a layer of chili beans and black beans.

Pour remaining salsa over the beans.

Cover and cook on high for 7 hours. Add rice, stir, and cook 1 hour longer or until rice is tender.

Variation: To make chupacabra Beef, substitute cubed chuck or stew meat for the chicken thighs.

Because my beef is already cooked, I'm going to forgo the flouring of the beef and just add some cumin and flour to the salsa in the crock-pot. I'm also thinking of increasing the rice to 2 cups at the end.

Last night we had a rotini sausage bake with spicy tomotoes. It was delicious.

Last night we had an olive, artichoke, and mushroom thin-crust pizza. It was unremarkable. Won't buy that again.

Tonight? Hmm. *thinking* Okay, I'm done thinking. We are going into Orlando this evening to the Mall at Millennia, so I've decided that we will eat there. (Gosh, it's tough making executive decisions like that. Good thing it pays well. :blink: )

actually no, I am cheap :lol: I know it is bad but I like to use processed cheese slices for grilled cheese.. it melts so nice... mmm yum...

I crave Cherry Limeades from Sonic like I know my husband will crave Tim Hortons when we move in 8 days!!! Favorite foods from Sonic are Coney Dogs (chili dogs, only place I will eat a chili dog) and Frito Pie...mmm ...cannot wait to go to Sonic!

ok I had great plans to make my husband all his favorites for his bday last week and then he asked if we could get Chinese..another fave for him...so we did..probaly our last "Canadian Chinese" meal.. so tonight were having steak, roasted asparagus, roasted broccoli, salad, and bruschetta.. today was my last day of work so we will call it an unemployment celebration..LOL ...now with both of us not working the real packing can begin...woo hoo

also have to say that we are also enjoying Ice Capps from Timmies again..2nd time this week.. sounds corny but Im saving the Ice Capp cups..gonna try some of the copycat recipes when we move and use the cups to trick us into thinking its a Timmies..LOL

i made Italian Mac And cheese...

just fry up some ground beef and onions and add a can of Italian diced tomatoes and a bit of extra basil and oregano.. meanwhile prepare mac and cheese like you normally would... when done mix all together... then you can either eat it like that or throw it into a casserole dish and top with some grated cheese and bake it until cheese is melted...

if you want to change it up, add a jar of salsa instead of the canned tomatoes...

I am so torn between food options .... hubby has offered to cook burgers on the grill (always wonderful when hubster cooks), but ....

yesterday at the grocery store, they had nitrate free lunchmeat FOR THE FIRST TIME EVER!!! Such a great thing for this preggo to see .... so now I can have a nice ham and cheese sandwich (of course, after thoroughly heating the ham) and I have tomato rice soup, my favorite canned soup ever.

Oh the choices, what WILL I do???

I made that dish I posted yesterday in the crockpot. I used the leftover beef, and it was wonderful. Very tasty. Between the corn and beans though.... :blush:

Tonight is leftover rotini sausage bake.

Last night we went to the Cricketers Arms Pub for dinner. It's touted as Orlando's "Premiere Authentic English Pub". Well, as a Brit, I can tell you that it is not authentic and far from "premiere". We had the fish & chips. Ugh. They were just as bad as the service. I am soooooooo looking forward to being in England this summer so I can have real pub food. bleh. *shakes off memory* The Guinness was good, though. :)
