I am making Asian chicken stir-fry and rice tonight... I am going to use a combination of peas and corn and maybe carrots...

Asian Chicken Stir Fry Recipe

Ingredients:

1 tablespoon vegetable oil

1 pound boneless chicken breasts, cut into strips

1 can Golden Mushroom soup (I just use regular mushroom soup or you could use cream of chicken soup)

1 to 2 tablespoons soy sauce

1 teaspoon garlic powder

1 (16 oz. bag.) frozen stir-fry vegetable combination, thawed (you could use any combo of vegies even fresh)

hot cooked rice

Heat oil in skillet. Add chicken and stir-fry until browned.

Add soup, soy and garlic. Heat to a boil. Add vegetables, and cook until tender-crisp. Serve over rice.

* you could add a little water if it is a little thick...

^^ basically what we had last night - sans the Mushroom soup (I don't eat mushrooms). I normally stir fry beef with green peppers, onion, celery, pineapple and sometimes i throw a tomato in there.

Lots of (low sodium) soy sauce, some worcheshire sauce, a couple of teaspoons of brown sugar some garlic - then just some white rice - I really like jasmine personally. I actually marinated the meat for several hours in the sauces, it was good. I also generally use sesame oil to cook stir fry in.

Tonight I have decided on Jane's chicken nuggets and - something, potatoes probably, not in the mood for cooking.

Joel grilled steak that has marinated for two days in a French dressing/soy sauce marinade. Oh baby was it good! Had a really good twangy taste to it and it was tender. He loves to cook - I don't argue one bit! - so he made green peas, kraft dinner, and baked potatoes. *sigh* How did I get so lucky! :D

Oooh Karen, the marinade sounds really good. I have never thought of using French dressing and soy sauce for a marinade. What were the amounts he used? I might convince hubby to dig out the grill this weekend :)

We had baked ziti again. Honestly, we will probably be eating that ALL WEEK since I made 2 huge pans (okay, I got a bit carried away!!!)

We had the leftover ugly chicken last night cubed up and put in a stir fry with asian noodles. I thickened up the sauce with cornstarch, and it was excellent! :thumbs:

Don't know what I'm going to do tonight. I have a beef tenderloin that Gene grilled up on Sunday. It was melt-in-your-mouth good. I don't want another stir fry, so I'll have to think of what to have it in.

Please post the marinate recipe (or if you were experimenting hehe) what the approximate measurements were Karen...thanks!

We're having baked ziti tonight. For some bizarre reason, hubby has stopped liking to eat veggies in the past month or so (he used to eat veggies a lot) ... so I am on a kick to "sneak" some into whatever we eat. Today, I added spinach, onions, red and green peppers, black olives, zucchini and mushrooms to the ziti, along with tomato sauce, mozzarella, parmesan and ricotta cheeses, and ground beef. Mix it all up and bake it topped with more parmesan and mozzarella. YUM!!! Normally, I add sausage too, but I have not been able to find any sausage that does not have nitrates in it (silly pregnancy rules to avoid nitrates :)) so no sausage this time.

Thanks for the tip. Unfortunately, Northern New Hampshire does not have a lot of grocery store options (let's just say, evil Shaw's has a monopoly around here). I may try to find a Trader Joes or Whole Foods when I head to CT to visit family. I would KILL for sausage right about now!!!

I have a challenge.

Thinking of food, nutrition, etc etc and talking a lot about it of late with my sweetie, he asked me what I know about cleanses.

Well, it so happens I know a lot.

Hee, hee.

I just have never done one. :lol:

So I am attempting to gather the courage and strength to do a water/lemon/maple-syrup/cayenne cleanse, aka fast.

Ten days....I shudder to think of it.

(Be brave little one...)

Maybe I will try a full day, eat for a few days and then go again.

And in the near future maybe I will be able to do ten consecutive days.

you don't have to use cream of mushroom... you could use cream of chicken or even cream of celery or maybe cream of broccoli or any kind of cream soup....

it turned out good last night.. I did have to add about half a can of water to it though....

Sorry to hijack the thread, but don't do it Spirit! Those types of cleanses don't do much for you but give you the runs! After working in the health and supplement industry for awhile it's my experience that the best cleanses are ones that don't severly restrict your eating habits or have laxatives. That's not to say that we shouldn't cut out junk food, alcohol, or caffeine, that's a must for a cleanse, but otherwise, food should be allowed. I'm not trying to advertise, but a product I would suggest is from Truestar. Try googling it and read a bit more. If you've got any questions I'd be happy to answer them! PM me!

tonight were havin BLT's and roasted asparagus...mmmm

heres a couple recipes I cant wait to try this spring and we start craving Timmies Ice Capps....havent tried either recipe yet...

COPYCAT TIM HORTONS' ICED CAPPUCCINO RECIPE

4 cups milk

1 cup non-dairy coffee creamer (Tim's uses 18% cream!)

2 tsp. vanilla

2 Tbsp. instant coffee

3 Tbsp. hot chocolate mix

1/4 cup cold milk

Heat the 4 cups of milk to boiling; remove from heat.

Add creamer, vanilla, instant coffee and hot chocolate mix; stir well. Pour mixture into a container with a lid; put into freezer and freeze until very firm, but slightly slushy.

Put mixture in a food processor; while processing, add the 1/4 cup milk in small increments to mixture. Process until all is combined and nicely slushy.

The recipe is "supposed" to make 6 to 8 servings, but we won't tell if it just amounts to one giant serving.

COPYCAT TIM HORTONS' ICED CAPPUCCINO RECIPE #2

can be made with regular coffee or decaf:

2 oz. boiling water

2 tablespoons instant coffee

2 heaping tablespoons sugar (or sugar substitute Equal)

4-6 ice cubes

1/3 cup 15% cream. (or chocolate milk...or regular milk)

Mix first 3 ingredients together to make a syrup, put into blender. Add ice cubes and blend until slushy. Add cream and blend until frothy.

Sorry to hijack the thread, but don't do it Spirit! Those types of cleanses don't do much for you but give you the runs! After working in the health and supplement industry for awhile it's my experience that the best cleanses are ones that don't severly restrict your eating habits or have laxatives. That's not to say that we shouldn't cut out junk food, alcohol, or caffeine, that's a must for a cleanse, but otherwise, food should be allowed. I'm not trying to advertise, but a product I would suggest is from Truestar. Try googling it and read a bit more. If you've got any questions I'd be happy to answer them! PM me!
