this recipe is pretty good...

Tender Italian Chicken

6-8 boneless chicken thighs

1 onion, chopped

1/2 cup tomato sauce

1/2 cup Italian dressing

1 teaspoon oregano

1 zucchini, sliced (optional)

1/2 grated Parmesan style cheese

Arrange thighs on top of onion in a baking dish. Combine the tomato sauce,dressing and oregano and pour over chicken. cook in oven for about 20 minutes. Add zucchini(if using) and cook chicken until done. Stir in cheese and serve over pasta....

They are really good bbq'd with bbq sauce. Or southern fried. num num num num

I make a marinade that is pretty good, leave the chicken in the marinade for a while (overnight is best) and bake in the oven. I usally do this with wings, but thigs is good too.

Olive oil

dijon mustard (or any kind is good, as long as its not the super yellow american mustard)

lemon juice,

salt/pepper

I don't know measurements, since I tend to cook by sight, eyballing what looks to be enough, but basically enough ingredients to coat chicken well (work it w/ hands to make sure each chicken piece is well covered w/ marinade). I usually bake in the oven, but this weekend I suggested my mom use this marinade for the chicken we cooked on the grill and it was delish! :)

The recipe I'm making tonight calls for chicken thighs. And aspargus. You could use any vegetable you'd like though...green beans, baby carrots...etc.

Saucy Chicken and Asparagus

1 pound fresh asparagus spears halved

4 boneless skinless chicken breasts (or whatever you have...skinned or boned...who cares!)

2 tbsp. vegetable oil

1/2 tsp. salt

1/4 tsp. pepper

1 can condensed cream of chicken soup, undiluted

1 tsp. lemon juice

1/2 cup mayonnaise

1/2 tsp. curry powder (I like to use more)

1 cup shredded Cheddar Cheese

Place the asparagus in a greased 9 inch square baking dish. In a skillet over medium heat, brown chicken in oil on both sides. Season with salt and pepper. Arrange chicken over asparagus. In a bowl, mix soup, mayonnaise, lemon juice and curry powder; pour over chicken. Cover and bake at 375 for 50 minutes or chicken is tender. Sprinkle with cheese, let stand for 5 min.

tonight I am going to make deviled chicken with some rice and maybe some steamed corn....

Deviled Chicken

* 1/2 cup ketchup

* 1/4 cup Worcestershire sauce

* 2 tablespoons brown sugar

* 1 tablespoon Dijon mustard

* 1 tablespoon water

* 2 tablespoons oil

* 1 (appr. 3 lbs) broiler chicken, cut up, or equivalent chicken parts

PREPARATION:

In a small bowl, combine ketchup, Worcestershire sauce, brown sugar, mustard and water; stir to blend well. Heat oil in a large skillet; add chicken and brown well on both sides, about 15 minutes. Remove chicken to a shallow baking pan.

Pour off fat in skillet; add ketchup sauce mixture, stirring to loosen browned particles in bottom of pan. Pour sauce over the chicken. Cover with foil and bake in preheated 350° oven for 30 minutes. Remove foil; continue to bake until chicken is tender, about 10 to 15 minutes longer.

Ooh Carla and Marilyn, both recipes look really good. I will have to try them when I am feeling better.

I am living dangerously tonight and having vegetable soup instead of chicken noodle. Woohoo!

Hubby will probably have hot dogs again.

Roasted Red Pepper and Tomato soup with big crusty rolls and butter - and maybe a salad:-).

The soup is actually made by Pacific Natural Foods. We gt it at Costco - and it is yummy!

Making taco soup tonight, last night I cooked goatmeat stew over rice. I have been watching hubby make the stew since he arrived and last night was the first time I made it. I did a good job and he said it was delicious. :thumbs::thumbs::thumbs::)

I will try to get it posted in the next couple of days-such a long process!!!! What's so funny is I have no exact measurement for some of the seasonings but will do my best!!!!!

That's okay. My measurement scale consists of "does that look good/does that taste good enough?" To me, a recipe is just a suggestion. :lol:

This evening we had teriyaki glazed salmon and shrimp with a vegetable rice. Very yummy. While I was waiting for my hubby to come home from the gym, I also made a meat and mushroom spaghetti sauce for tomorrow evening. Any leftover sauce will go into the individual cheese-stuffed shells covered in mozzarella and baked when I get around to it. In other words, they'll get frozen until I feel a lazy day coming on. :lol:

Ok, so I didn't make the sauce recipe Marilyn posted, I did do the pork chops, fried them then put them in the oven in BBQ sauce, bit of a shortcut there :thumbs:

That with potatoes and yam - it was good!

Edit: Can I call my pork chops - BBQ glazed??
