Well, I ended up making mandarin orange chicken (from Trader Joe's) yesterday and cooked up some wild/brown rice and threw in a hoard of veggies. Some leftovers, but not enough for another meal. It'll be warm tonight, so maybe Gene can throw on some turkey burgers and I'll make a salad?

We had homemade burgers last night. Tonight we will have a shrimp and spinach salad with avocado, strawberries, and a bit of bleu cheese. Hmm. I think some cucumber and tomato might go well with that also. And some raspberry vinaigrette. And some red onion which has been soaked in a vinegar/water/sugar solution.

Carla I LOVE Trader Joe's! It's my fave store of all time here, I go once per week at least. Last week I got this BBQ pork that was already marinated/cooked and stir fried it with some rice for Glen he said it was deeeelish!

We went for Italian last night, and my fiance' asked me if I knew how to make baked ziti. I don't have a clue! I'd love your recipe... if you're willing to share, Jill!

As for us, dinner tonight will probably be train food! Ugh.

We do stop there, but I'm not sure for how long. I don't even know if change trains or not. We didn't coming, so, who knows. But, if we have time, that is definitely a good idea! :thumbs:

I'm going to make baked ziti tonight, I've been craving that

We went for Italian last night, and my fiance' asked me if I knew how to make baked ziti. I don't have a clue! I'd love your recipe... if you're willing to share, Jill!

As for us, dinner tonight will probably be train food! Ugh.

Of course! I got this from recipezaar, and it was REALLY good! To note, I didn't want many leftovers so I cut the recipe in half since it was just 2 of us:

SERVES 8

Ingredients

* 1/2 lb ziti pasta

* 16 ounces ricotta cheese

* 3 cups mozzarella cheese, grated

* 3 cups spaghetti sauce (I used vodka sauce, yum)

* 1/2 cup parmesan cheese, grated

Directions

1.

Preheat oven to 350.

2.

Boil ziti, following package directions, drain and place in a large bowl.

3.

Mix all the ricotta cheese and half of the mozzarella with the ziti.

4.

Spray a 13x9 pan with Pam.

5.

Cover the bottom half of the pan with about half the sauce.

6.

Put the ziti mixture on top of sauce.

7.

Pour remaining sauce on top of ziti.

8.

Sprinkle with the parmesan cheese.

9.

Top with the remaining mozzarella cheese.

10.

Bake for 20-30 minutes until cheese is melted and it is lightly golden.
