I had a Cadbury creme egg, glass of oj and a 100 calorie pack of cheezits. I was mad at hubby earlier and in no mood to fix anything for dinner, so I lasted until a few minutes ago and hit the kitchen up for something easy.

The dinner of champions!

We had a weekend filled with good food! Tonight I'm using up the last of the meatloaf I made last week. I cooked up two meatloafs, and put one in the fridge. I'll make some type of potato or rice with it and broccoli.

I put everything together for the butter tarts last night! Everything's sitting in the fridge and I will make them later today. It was too late to make them last night. So excited. Tonight we are having chicken pot pies. I cooked an extra piece of chicken when I made dinner last night and made the filling then topped it with some puff pastry. Will bake those later.

Oh! And I made my husband's lunch for today and then he told me that he didn't need a lunch today as he was getting in the car this morning. :bonk:

Well we have left over roast from Sunday - but neither one of us liked it that much - but I hate to waste it!

I did everything I could to make it tasty, cooked it with onion, carrot and celery, some curry powder and worchshire - however, I will have to get a little bit more creative with it I think and turn it in to a shepherd's pie for dinner.

I made rice and warmed up some nigerian chicken stew for my hubby. I seasoned some boneless/skinless chicken breast and pan fried it and made mac and cheese and corn on cob for my children. My 13 yr old son was cute, he said "mom, how did you make the chicken, it taste like you grilled it"...kids can say the funniest things

To Blessed to be stressed:) I realize that all things have a purpose and a time.....have faith and the Lord Almighty will provide... when the time is right, he NEVER fails!

“...Isn't it splendid to think of all the things there are to find out about? It just makes me feel glad to be alive--it's such an interesting world. It wouldn't be half so interesting if we knew all about everything, would it? There'd be no scope for imagination then, would there?”

Doing tortilla soup again... meatless this time and I'm adding corn and beans. I'll usually follow a recipe the first time and then do things on my own the second.

Oh and I bought a case of Keiths at the duty free shop yesterday so I think I'll have one of those with dinner too. :P
