Timeline

Pork chops simmered in sauerkraut, with broccoli, baked potatoes and fresh strawberries for dessert. Dad is still here and enjoying some home cooking for a change. As he says - his attention span is 12 minutes so if it takes longer than that to make he doesn't make it! Tomorrow is his last full day visiting and he leaves for home Sunday morning. We've had a great visit and it is good to see him eat well.

Went out with friends tonight ... and we found that the pub has a special during Mud Season (the 5th season up here in Northern NH, when everything is melting and, well, muddy) .... $5 apps. So we shared a bunch:

fried calamari tossed in a sweet and spicy pepper sauce - tres yummy!

seafood stuffed mushrooms - decent

coconut chicken - bland, couldn't taste the coconut

crab and artichoke dip - decent

mussels steamed in white wine and garlice - pure heaven!

maple and whiskey wings - the most delicious thing ever!!! yummy sticky, spicy sweet sauce ... I could eat a zillion.

I made my first lasagna last week ( I know :blush: ) but it turned out really good since I've watched my mom doing it for years. So I am repeating it tonight because it was so good and I haven't had lasagne in a long time other than last week :P

Recipe please! :)

Lasagne de Maman

2 lbs of ground beef (your choice of quality)

2 cans of Spaghetti sauce ( I like to mix 1 can of Dei Fratelli and 1 can of Hunt's meat sauce)

Italian seasoning

1 tbsp crushed garlic

3 cups Ricotta cheese

2 cups of fresh spinach

1 egg

1 box Lasagna noodles

3 cups of shredded Mozzarella / Provolone/ Asiago/ Parmesan cheese mix

For the sauce I first cook the beef in a sauce pot, strain the fat, then I put the garlic first for about 30 sec, add the beef and add the 2 cans of tomato sauce. I use Italian seasoning to make it taste a little better. Mine has sea salt in it already. I let is simmer while I prepare the rest.

For the Ricotta mix, I remove the stems from the Spinach, then boil them for about 30 sec, then drain (even squish it in paper towel to remove the excess of water) then I chop it. Then I add the chopped spinach to the Ricotta cheese and I add 1 beat egg to the mix to make it more creamy. I also add about a handful of the shredded cheese mix.

Boil the Lasagna pasta until they are "al dente"

In a 9" X 13" pyrex pan here's the layering I do:

1-lasagna

2-spaghetti sauce

3-lasagna

4-Ricotta-spinach-egg-cheese mix

5-lasagna

6-Dump the whole mix of Mozzarella-asiago-parmesan-provolone mix, and to make it more tasty I add some real aged Asiago

Cover with aluminium and bake for 35-40 min at 350, then uncover and bake for 10 min or until cheese is browned.

Cool off a bit and enjoy!

It serves about 8 really filling portions, for instance I brought lunch for myself and 3 of the girls at work, and hubby brought some for him and 2 of the guys at his work....and we still have some left in the fridge :star:

We had a lovely Easter dinner at a friend's. It was a large gathering. I brought buffalo chicken dip, which went really fast. We also had lam and apricot kebabs, roast lamb with mint jelly, mashed potato, mashed turnip, spaghetti squash, Greek salad, couscous, green bean casserole. For dessert, there was a bunny shaped chocalate amaretto cake and an apple, pine nut and jalapeno pie. Everything was wonderful!

i ended up going to my SIL's house today, just me, the hubster had to work.... I figured it was better then staying at home by myself..
