This is for dinner with pork chops and maybe corn on the cob. It's been a long time since I made potatoes au gratin - so long I can't even remember how long!

Creamy Au Gratin Potatoes

4 russet potatoes, sliced into 1/4 inch slices

1 onion, sliced into rings

salt and pepper to taste

3 tablespoons butter

3 tablespoons all-purpose flour

1/2 teaspoon salt

2 cups milk

1 1/2 cups shredded Cheddar cheese

DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.

Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.

In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.

Bake 1 1/2 hours in the preheated oven.

Those sound, and look SO yummy! Tonight I'm thinking turkey meatloaf and those potatoes now! :lol: I picked up some asparagus yesterday for .98 cents a pound! So, I'll have that with it.

Last night I did have the veal parmigiana and it was divine. *sigh*

Oh. I'm getting hungry for breffrus now. LOL. For some reason I don't get hungry until I've been up for a few hours. Think I'll go have some raisin toast. No idea what we'll have for supper. But I do know it will begin with a perusal of the freezer. I can't fit anything else in there so I've got to start taking stuff out. :blush:

I'm surprising hubby with a Canadian dinner since I just got home - chicken with swiss chalet dipping sauce, and poutine with St Hubert BBQ poutine sauce (I know it's not the healthiest dinner but today's special). Also an Alexander Keith's beer! And for dessert, Laura Secord easter creme eggs! For me, something light I had a large lunch. We're celebrating being together after 2 weeks apart and my US resident status :D

Gene's tummy was not 100% last night so I just put some tomato roasted red pepper soup on, and we had chicken salad wraps for supper. Tonight I'll make the turkey meatloaf with those creamy cheesy potatoes and asparagus.

Tonight my husband has requested some sort of northern bean dish made with ham hocks. As I have never seen nor tasted a dish like this I have no reference point, so I will wing it. Kathryn, you've mentioned how much your husband makes a favourite pinto bean dish.... do you have a recipe which you could share with me? I've found a few online and I think I may do a variation of one or two of them, but I'm hoping for some further insight. Thank you. :) (Oh. I've had the beans soaking overnight so I'm ready for the next step.)
