Pizza soup sounds good. What's the recipe? :)

I made meatloaf and steamed veggies. Hubby said he really liked the meatloaf. I changed my basic meatloaf recipe a little .... used a combo of ground pork and ground beef instead of just ground beef, added some french fried onions as well as a diced raw onion, threw in a splash or two of worcestershire sauce, topped it with a glaze of mustard, brown sugar and ketchup and then sprinkled more french fried onions on top. I blame the french fried onions thing on Nev and Jill :)

Mmm that sounds awesome, I think I may add that to the menu next week. :D

that is how I usually glaze my meatloaf, ketchup, brown sugar and mustard but lately I have been adding a little apple cider vinegar to it and cutting back on the mustard a bit.. mm so good...

Here is the original recipe. I modified mine a bit last night, though. But it's super easy and really yummy.

PIZZA SOUP

1 tbsp vegetable oil

1 chopped onion

1/2 cup sliced mushrooms

1/4 cup slivered green pepper

1 can 28 oz tomatoes, chopped

1 cup beef stock

1 cup thinly sliced pepperoni

1/2 tsp dried basil

1 cup shredded mozzarella

[/size]

Stir fry onion, mushrooms, green pepper and oil until soft but not browned. Add tomatoes, stock, pepperoni and basil; cook until heated through.

Ladle soup into 4 ovenproof bowls; sprinkle with cheese. Broil until cheese is melted and golden.

I had 4 pieces of cheese with bread... and Chipnuts. Awesome dinner I know.

Thanks for the pizza soup recipe. Hubby and Declan are going to CT tomorrow to visit my family and so hubby can help my stepfather with a project. I might make the soup over the weekend. Then again, I might just eat Lean Cuisines and spend my free time doing all the projects I never have the time for!

Last night I had chicken tenders, broccoli and mashed potatoes at Ruby Tuesday's and it was very good. Tonight I will heat up leftovers. I made some chicken stuffed with a ricotta/tarragon blend, rolled in bread crumbs and fried until golden, then baked in marinara sauce. Lemon ginger rice and asparagus we'll have.

autumnchik, I too make my meatloaf with the combo of beef and pork, I find it less dry and tastier. I always put in a few tablespoons of steak sauce in mine instead of the Worchestershire sauce and find its perfect! I love making "new" meatloafs. I once put in crushed dorito crumbs instead of breadcrumbs, some cheese, and taco seasonings in a tomato based sauce for the top and it was delicious!

OMG, that sounds FABULOUS! :o I'm so hungry now. :lol:

I've made Billy Joel's wife's meatloaf recipe a few times and it is really yummy. I also make one where you flatten it out, lay some black forest ham and provolone on top, then roll it up and bake it. That one's yummy too.

Last night we had corn chowder and biscuits. Tonight?..... well, I have some fresh pineapple that didn't turn out to be that great so I'm thinking I should bbq it in a pork kabob or something to bring out some sweetness. Or maybe a sweet and sour pork dish. We'll see how industrious I feel later on. lol
