While I've never had a "ball", I fry macaroni and cheese. It's divine, and in my opinion, better than the first time around! Just put some butter, or margarine in a fry pan and get it really crispy. It's awesome! Gene never heard of it, and while he enjoys it, his face is always scrunched up when I talk about it. :lol:

We had a lovely lunch at a winery in Herman Missouri this weekend. Here's the link to the restaurant. I had an onion tart and potato pepperjack soup. Gene had a sauterbraten sandwich with german potato salad.

Last night I made good ol' corned beef boil. Potatoes, carrots, corned beef and cabbage. Probably left overs tonight!

Oh the restaurant looks charming Carla!

I ended up making stew yesterday, so we just had that with a piece of bread, it was good though.

Jill that is funny about the fried macaroni and cheese balls - just this weekend my Husband said, what if you took macaroni and cheese and coated it and fried it - then again, I don't think there is anything here that hasn't been fried haha.

Oh it's SOOOO good! I never had it fried before, but I love mac and cheese so eating fried little balls of them was just mouth watering.... It came with this creamy marinara sauce too for dipping yum yum.....

Last night I made corned beef hash courtesy of Alton Brown. It was very very good. He didn't add potatoes in his, but I did, as they were left over.

Tonight I don't know what we'll have. I've run out of leftovers. :lol: I have some lovely spinach/cheese ravioli though that I may make a cream sauce for. Or I could make some homemade pizza.

Well (surprise) we are low on groceries again. So last night Husband was going to the store on his way home, but we potentially were going to look at a house, which we didn't - that is now going to happen tonight - so again no store.

So we had Boston Market for dinner - it was ok.

I guess I could make pizza, I have the stuff for that.

Tonight is tacos. I made some fresh pico de gallo yesterday.

Stacey do you have a recipe for that,...I know its tomatoes, onions, cilantro, and in some cases a hot pepper,..but I would love a recipe for the quantities?

10/22/2007 Filed I-130 x 2 in person + paid 710 USD (355 each )

10/22/2007 Filed DS-230 part 1 x 2

10/22/2007 Received the document checklist and FRN (case) numbers

12/18/2007 I-130 petition approved, but I didn't know. I was away at the time, didn't get confirmation letters til I got back from the states.

12/20/2007 Notice of Approval arrives in tha mail. According to the date received stamp on back of envelope at my post box.

Will now wait til hubby is back from Iraq to fax in checklist readiness, even though, I have been ready since day of lodging I-130's. all except medical.

02/18/2008 Faxed the "checklist" back to the consulate.

02/25/2008 Medicals completed.

02/25/2008 Appt letters in mail for appt on March 7th. Cant go due to prior military commitments. Emailed consulate and received an amended appt date of March 12th 2008.

03/12/2008 Visa interview - APPROVED x 2

03/27/2008 Visa's finally generated. I emailed the consulate. they apologised for the delay. They forgot to issue the visas after approval.

03/31/2008 Received visas

04/26/2008 Flying out of Frankfurt to next duty station on orders.

I made a roast in the crockpot on Sunday night .... cooked it in a beer and a can of Rotel tomatoes, then shredded the meat and let it simmer in the liquid. We've been having yummy burritos ever since. Tonight, I think I want something different, but not sure what.

I don't really follow a recipe. I made quite a big batch so I would cut it down if it's only for a few people.

8-10 tomatoes ( I pick ones that look nice and not too ripe) I take out the seeds.

1 red onion

1 sweet white onion

5-6 jalapenos (I take the seeds out)

2-3 bell peppers (I like orange, yellow, red for the colours)

1 bunch cilantro

3 or 4 fresh limes juiced

kosher salt

I just chop everything and mix.

Tonight is crock pot chicken fricassee. Served with peas, steamed carrots, brown or whole grain rice.

We love Alton Brown!! I am curing a corned beef- it will be ready on Saturday. I got the recipe from that show.

Well yesterday it was my husband's birthday so we went to the Cheesecake Factory! SOOOOOOO yummy. I had the fresh fish tacos which were fabulous and he had the orange chicken. Then we shared a piece of coconut cream pie cheesecake. Mmmm...

Tonight we're having chicken enchiladas.
