so I figured I would be daring and try out a new meatloaf recipe today...

* 1 1/2 lbs ground beef (ground shoulder roast is good)

* 1 slice bread (broken or chopped finely) (I used Italian bread crumbs)

* 1 egg

* 1 small vidalia onion or type sweet onion, finely chopped

* 1 teaspoon table salt

* 1/4 teaspoon black pepper

* 4 tablespoons ketchup

* 1/2-2/3 cup whole milk or half-and-half (I just used 2%)

Sauce

* 2 tablespoons apple cider vinegar

* 2-4 tablespoons dark brown sugar, packed firm (to taste)

* 1/2 cup ketchup

1. Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.

2. Smooth out top.

3. Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.

4. Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.

5. ENJOY!

They're not very good for you, they're pretty much sugar and butter but man are they yummy! And they're perfect for when I need a little wheat free treat. Hey E! Here's the recipe!

Flourless Chewy Oatmeal Cookies

1/3 cup butter

1 1/2 cups rolled oats

1/2 cup granulated sugar

1/4 cup brown sugar packed

1/8 tsp salt

1 tsp vanilla

1 egg

Melt the butter and set it aside to cool.

In a bowl mix the oats, sugars and salt with your hands or a heavy spoon to break up any lumps.

Whisk the egg and vanilla into the melted butter.

With your hands or a heavy spoon mix the wet ingredients into the dry. Form it into a ball.

Chill in the fridge for 20 minutes.

Preheat the oven to 350 degrees.

Spoon onto a cookie sheet in one inch balls. Pat them down just a little tiny bit. Lining the cookie sheet with parchment paper is optional.

Bake for 13 to 17 minutes until the edges are golden brown and the rest of the cookie is medium golden in color.

Let them cool on the sheet for at least 10 minutes before taking them off of it using a spatula.

Keep cooled, cooked cookies in the refrigerator.

You can spread the dough out more and they will turn into large lace like cookies that are very crispy.

I added a tsp of cinnamon to my cookies because I like it with my oatmeal. I also lined my pan with parchment paper to make cleanup easier. It turns out it also makes it easier/faster to cool the cookies because I could take it off of the hot pan. The cookies don't actually make a ball of dough. The dough, for lack of a better word is more like a mound of oats and sugar. It firms up after being in the fridge for a little while. The recipe says to spoon one inch balls, but mine weren't balls at all, more like little mounds. Just try to smush it together.

These are really good! They are chewy in the center and crispy on the edges. They're almost like caramel with oats in it! I hope you enjoy them. They're really pretty easy to make as well.

Makes 1 1/2 dozen cookies. (Not enough!!!!) :D

ok I think this recipe is a keeper.. my hubby even said that it tasted better then my regular meatloaf :P I think it is the sauce that makes the meatloaf... :thumbs:
