Timeline

I made this really yummy chicken tonight.. I tried a recipe I have had sitting around for years that I had cut out of a Chatelaine magazine...

Lickety-split chicken

1/4 cup (50 mL) frozen orange juice concentrate, thawed

2 tbsp (30 mL) chicken seasoning, such as Montreal chicken seasoning

2 tbsp (30 mL) soy sauce

8 skinless, bone-in chicken thighs

1. Lightly oil grill and heat barbecue to medium. In a large bowl, stir orange juice concentrate with seasoning mix and soy sauce. Discard chicken skin, if necessary. Add chicken to bowl. Toss to coat.

2. Place chicken on grill. Barbecue with lid closed, turning and brushing often with remaining mixture, 10 minutes. Discard any mixture. Continue grilling, turning occasionally, until chicken is springy when pressed, about 10 more minutes. Great with store-bought coleslaw and a glass of beer.

* I used Emeril's Chicken essence for the spice and I added a bit of honey because that essence is kind of spicy.. I also reduced the soy sauce to 1 tablespoon and then I baked them on a broiler pan in the oven..

That sounds yummy Marilyn. I have a gas oven and I don't like using the broiler pan which is at the bottom, not a very big area, and darn hard to keep watch over! Might be good for our grill though!

I had leftover speghetti last night, Gene had an apple as he had a big lunch out with the guys from work and wasn't hungry at suppertime. I'm going to have to go through my freezer and try and think what to have tonight. I have to go grocery shopping this morning so if I see some nice meat, I'll probably pick that up. Maybe a rotissarire chicken?!

I made pizza last night, italian sausage, onions, green peppers and tomatoes for toppings - it was really really good. Also made little apple/blueberry pies - also pretty good.

Tonight I think I will just make something easy, like spaghetti.

Interesting, the blueberries I bought here are kind of sweet, I can't remember ever buying any in Calgary that were anything other than tart! It put me off buying them fresh, but now I will buy them regularly.

no, I just used the broiler pan but I baked the chicken ... I used my toaster oven.. my BIL got us the biggest probbaly most expensive toaster oven you can find as a wedding gift :P

the chicken had lots of flavour which I found surprising because you don't marinate the chicken at all....

yesterday we had a BBQ at hubby's brother's house and we brought the meat... chicken of course.. half of the chicken I marinated using that recipe I posted a few days ago and the rest we just cooked plain and then made a sauce you brush on during the last 10 minutes of cooking.. they both were god but I think the marinated one beat out the other one by a little bit... :whistle:

anyways I was going to cut up the leftover chicken up and make a stir fry or something but I think I am just going to serve them as is....and make some kind of pasta or rice to go with it...

I made a roasted beef last night with mashed potatoes and asperagus. There is leftovers, I'm just trying to think what to make with them. I have a dentist appointment today so while the freezing will be out, my mouth will not want to eat I'm sure even though my tummy will. I might put the remainder of the roast in the slow cooker and see if it becomes more tender. If so, it can be sliced onto a bun, with a salad for Gene's supper.

We picked up a burrito and some tacos last night - they were ok.

Not sure what is for dinner, just looked in the freezer and we have 1 pkg of lean ground beef and one pkg of pork chops :lol:
