I love guacamole with just about anything! :) It's SO yummy!

We shared a new york striploin steak. It was very large! I finally got it right. The last few times I'd tried to make steak I overcooked it a lot, so I'm pretty happy. We also had brussels sprouts with mustard/garlic butter, and a black bean corn salad. I also had sauteed spinach and some onion and mushrooms. Man it was good!

That taco pizza sounds SO good xtinab! I think I definitely need to make that next time I make pizza.

Hey Jill, do you prefer thin crust or regular? If you prefer thin, let me know, I have a recipe that literally takes 10 minutes to make a crust from scratch, and it's SO yummy!

I'll type out the recipe here but also give you the link to the website, just in case!

Thin Crust Pizza

.25 oz pkt active dry yeast (or 1.5 teaspoons if you have a jar)

1/4 tsp granulated sugar

3/4 cup 110 degree water (warm tap water)

1 3/4 cup all purpose flour (or spelt flour)

1/2 tsp salt

pizza sauce of your choice

toppings of your choice

shredded cheese of your choice

-Dissolve yeast and sugar in water and let sit for 8 minutes

-Mix flour and salt in bowl.

-Pour yeast mixture over flour mixture and mix well with a heavy spoon.

-Turn dough onto floured surface and knead for 2 minutes

-Working from the edges to the center, press the dough into a 12" circle.

-Place dough on lightly greased pizza pan (or on parchment paper) and press to edges.

-Spread sauce over crust and add desired toppings and cheese

-Bake in 500 degree oven for 8-12 minutes or until edges are golden.

As I said, I used spelt flour which was awesome and I ended up rolling the crust out as a dough made with spelt flour is less stretchy. It worked perfectly though! It was sooo yummy. We had sharp cheddar cheese, parmesan cheese, chicken, turkey bacon, onions, olives, mushrooms, and red peppers. SUPER good! I'll definitely be making it again soon. The crust only took 10 minutes total to make. My husband even agreed that it was better than take out! This would also work with whole wheat flour instead of AP!

I love guacamole. I went to make some the other day, mashed the avocado up and was about to add spices when I decided to give Declan a bite of the mashed avocado. Well, he ate nearly the whole thing, so there went my guac :(

how do you know when an avocado is ripe?

I looked online and did what they said and thought a couple of the avocados I bought were ripe enough but they weren't...

Bascially by feel ...

A lot of times, the ones in the store here are either rock hard or too mushy already, so I will buy a hard avocado and let it ripen at home for a few days.

this is from a website I saw:

1. Press gently on your forehead. This is an example of how an avocado should not feel when you press on it. This means the avocado is too firm and not ripe.

Step2 Press gently on your cheek. If your avocado feels this way, do not purchase it. Your avocado is too ripe and possibly rotten.

Step3 Press gently on your nose. This is how your ideal avocado should feel to your fingertips. Look for avocados with a little bit of give, but not too mushy.

Step4 Pull off the small stem attached to the avocado. If the underside of the stem is brown, do not purchase the avocado. There will be brown spots inside.

Step5 Look for an avocado that has the softness and firmness of your nose and has a nice, green spot on the underside of the stem. You have found the perfect avocado. Take it home, cut it open and enjoy.

Last night we had these salmon bundles that I found a recipe for in Taste of Home, one of my favourite recipe magazines. Gene really enjoyed it, I found it horrible!! It's basically a filet of salmon, with a thin layer of garlic cream cheese on it, then spinach. You then wrap it in four crescent roll dough's that you've pinched the seams on. Ick! Sounded good...looked good...back to the drawing board!

Gene is having lunch "out" today with work mates, so that usually means he's having a bigger lunch than normal. Maybe we'll just have soup and a grilled cheese sandwich.

I am going to try that pizza dough recipe too!

We had Thai food last night, my Husband brought it home from the local place - as always it was very good. We also ordered curry and he was going to take that for lunch today but forgot, so he will have that for dinner tonight and I might just open a can of Singapore curry and have that with rice.
