It's true isn't it tralimix? I'm going back to homemade stuff simply because I would rather make the effort to make it than not be able to pronounce half of what's in the one from the store! They put so much "stuff" into products nowadays to make it last longer on the shelf or taste like it's supposed to taste, or just plain old filler. It just doesn't seem natural to me!

I think tonight we're going to have chicken and refried bean tostadas with some sauteed peppers and onions on the side. Hey, maybe on top?!

I am making this sticky chicken thing and going to serve it with my last box of Kraft Dinner... and maybe some canned corn... or raw carrots, if they are still good :P

I said I was going to make tostadas tonight for dinner but I changed my mind. I was craving pizza SO badly and so was my husband. Usually it would be so easy just to order pizza and get it even though it is high in fat and made with wheat flour. I contemplated it, but with money being tight I decided I would try to make my own even though I was SCARED! :) Spelt flour can be a little tricky to work with but I searched for spelt pizza recipes. I found a really great thin crust recipe that someone said they had successfully substituted spelt flour in. So, I bit the bullet and made a spelt pizza crust with chicken, turkey bacon, red peppers, onions, black olives, and mushrooms. Oh, and I put sharp cheddar on the pizza instead of mozzarella. It was SO good. It really fulfilled the craving and I'll be making pizza once a week from now on! WOOHOO!

Mmmmm sounds very good! I posted a recipe here once for a cauliflower crust pizza that was very good. E tried it as well. If you can't dig it up, I could give it to you, as an alternative to the spelt if you'd like.

I said I was going to make fish yesterday and I changed my mind as well. We had smoked garlic sausage, lemon roast potatoes and a salad. I'm trying a new recipe tonight. A salmon bundle with spinach and cream cheese. We'll have some more salad with that and some quinoa.

Hey Carla, I've made the cauliflower pizza crust several times now and I really like it, but it just doesn't cut it for my husband. It's not crispy enough for him. I'm also not able to have dairy right now so that's a no go unfortunately. Spelt crust is a reasonable compromise I think, no dairy, and it tastes enough like regular pizza to make my husband happy!

Last night, we had sloppy joes and a spinach salad. Not sure about tonight. I have some leftover ground beef so I might make quesedillas. I also have chicken I need to use .... so maybe a saute with artichoke hearts, capers, green olives, onions and white wine. We'll have a salad with either option. Oh, the choices!

I do this once a week. I find it really helps with only doing groceries once a week and I only eat what I put down and it helps me control my weight.

Tonight it's Feta Turkey Burgers.. .YUMM!

I had a taco pizza :) Ground beef with taco seasoning on a toasted pita with cucumbers tomatoes cheese, and salsa. I missed out on the sour cream since I didn't have any, but I think it would have been much better with it. Definitely going to do it again.
