Tonight was supposed to be crockpot beef stroganoff, but I didn't get my butt out of bed early enough to throw it together, so we will be eating pulled pork sandwiches again. No worries, because I LOOOOOVE pulled pork. I am just sad that I am out of dill pickle slices to put on my sandwich :(

The lasagne was SO good. AND it was only 400 calories a slice, and it was a really big piece. It's funny because when I made it, I made it so that I could eat half of the square pan and not feel like I ate a whole lot of calories but it was WAY too much, so I was more than happy to eat only a 1/4 of the pan and be able to eat a snack or dessert later! YAY, I love it when that happens.

Whole wheat pasta sux. :dead: I tried to like it..... I truly did. But you just can't beat a good semolina pasta.

Carla..... almond meal? Is that like ground almonds?

Well, last night we had steak without carmelized onions, roasted organic beets, and asparagus and bearnaise sauce. It wasn't until I was cleaning up that I noticed the onions were still sitting in the pan. <_<

Tonight my husband is working late so I am making shrimp cocktail over spinach with homemade cocktail sauce.

Yes Krikit, almond meal is ground almonds. You can buy packaged almond meal at the grocery though, I don't grind it myself.

Well, my roast yesterday was awesome! I cooked it 4 hours in the oven with the marinade, then cooled it. Warmed it for another hour before eating last night after slicing it. It was much like pulled beef in fact, as it shredded it was so moist. I made some asparagus with it, however it wasn't that tasty...kinda blah.

Tonight I think we'll have pulled beef on a bun. A salad, and maybe some pork and beans?

Oh good. I'm going to try your muffins then. I have some in the cupboard that I brought from Canada but I've been making almond cookies with it. The stores here in Fla don't carry it, though. :crying:

I think the cheapest cuts of meat slow-cooked are definitely the most flavourful. I make a beef, bone in dish which is braised slowly in tinned tomatoes, garlic, onion, and a little bit of beef bovril and pepper then served over rice. It's fabulous.

I made a chicken stir-fry... fried up some chicken, celery, red bell pepper and onion and added a little salt, pepper, garlic powder, paprika, soy sauce, ginger and brown sugar.... will serve it with rice and some egg rolls I wanted to try that I found in the freezer section.. they are called "Chungs"

I think I mentioned yesterday we would have that beef I made up on buns yesterday, but then I remembered that I gave the beef to Gene for lunch yesterday, so I couldn't serve it for supper as well. We had instead burgers. We had beans with that, and I heated up some potatoes for Gene. The burgers were very very good. I used my George Forman Grill. I don't use it enough I'm thinking!

So, I sent him with leftovers for lunch today, so I think we'll have the pulled beef for supper tonight. I picked up some nice salmon the other day, so I'll have to take that out of the freezer today and put it in the fridge for thawing for tomorrow night.

OH Carla .. we use ours all the time.. for burgers, fish, chicken, just about every meat we have.. It's too cold now to bbq outside, so we enjoy the Foreman in the winter.. and we got a new one that has removable plates.. SUPER easy clean up!

Last night I made Thai lettuce wraps. And more almond cookies. (I need to send some to my step-daughter in France so she can have a taste of home. lol) I have no idea what we're having this evening. I should have taken a raincheck for the harvest salad because I don't feel like cooking. lol

Does it then not become your duty, as a Canadian, to show him what it's aboot??

We had corned beef last night, I mean as in out of a can. This is something I used to eat occasionally a while ago and Mike was hankering for it - well it was tasty, fried with onions - but I believe it is best left as one of those 'we will eat that every few years' things.

I have pork chops in the fridge for dinner, but now that Carla has mentioned hamburgers, I am thinking that is what we should have. I made some yesterday so they are in the freezer and loooooking for a BBQ!!

Plus I should make bread today so I can make buns at the same time.
