tomorrow I think I am making ham with pineapple and brown sugar.. the hubby's aunt did that for Thanksgiving last year and it was soo yummy...

although my hubby is kind of strange, he informed me once that he doesn't consider ham a main dish but thinks of it more as side dish :blink:

well, too bad for him because that is what we are having.... might serve it with some mashed potaotes or maybe rice.. not sure yet.. and some corn or peas..

We had pulled pork sandwiches, baked beans and sugar snap peas tonight. Tres yummy! I cooked the pork in the crockpot with a beer poured over it and some garlic and onion in there as well, then shredded it and added a combination of 3 different brands of bbq sauce (because I only had drabs of each). Somehow, the sauces combined well!

I made chicken curry last night. Not quite sure what we're having this evening. My husband offered to bring in a harvest salad (my favourite) from Crispers on his way home this evening so that I don't have to do anything. :luv: I thought that was sweet, though I don't know if I'll take him up on it or not. He was just trying to give me a break since I've been looking after houseguests for the past two weeks.

Awwwwwwww You should take him up on it. Always take your husbands up on times when they're treating you to "give you a break"!

I was going to make a roast yesterday, I don't know why I bought it after I took it out, it said bottom beef round. That's a really tough piece of meat. Anyway, I'm going to do it slow in the oven with either a cola or beer. So, when I realized this yesterday at 3pm, I had to decide what to have since it wouldn't be the roast. I chose whole wheat pasta (gosh, doesn't that take some getting used to??? :hehe: ) with homemade marinara sauce. Some turkey meatballs accompanied.

Today I'm going to cook the roast. Figure 4 hours at low heat. Mmmmmmmmm

I was going to make a roast yesterday, I don't know why I bought it after I took it out, it said bottom beef round. That's a really tough piece of meat. Anyway, I'm going to do it slow in the oven with either a cola or beer. So, when I realized this yesterday at 3pm, I had to decide what to have since it wouldn't be the roast. I chose whole wheat pasta (gosh, doesn't that take some getting used to??? :hehe: ) with homemade marinara sauce. Some turkey meatballs accompanied.

Today I'm going to cook the roast. Figure 4 hours at low heat. Mmmmmmmmm

The whole wheat pasta? Yeah, I have never really gotten used to it, so I don't buy it anymore - then again, we rarely eat pasta.

The round roast is one of my favorites, although it takes so long to cook, the flavour is worth it don't you think Carla?

We had pulled pork the other night, but I think last time I made it I used less of the seasoning mix, because although it was good, it wasn't great. Last night just a steak sandwich and salad.

Tonight i'm not sure, we have, basically, some turkey breasts in the freezer :lol: I think we will end up picking something up and we will either go to the store or Mike will stop in on his way home.

To tell you the truth trailmix, I've never had a bottom round roast before! That's what's so weird. I must have picked it up in error. Anything that takes a long time to cook at a low temperature will probably be good though! I went for the beer, catsup and onion soup mix marinade. 4 hours at 300, then cooled in fridge until one hour before serving when you slice it, pour marinade over it and roast it again at 350 for an hour. My tummy is grumbling already!

Pulled pork, chicken, beef...is a fav of mine.

Your Mike is such a sweetie...he goes to the store after work or picks up supper! :luv:

Oh man.. you are making me drool.... hubby's never had them before.. these are from NB and they are pre gutted and deboned.. YEAH!!! :dance: break out the vinegar I say!!

Carla, I never could get used to whole wheat pasta. I'm not sure what it was but I couldn't drown it in enough sauce to make it taste good to me. I have tried every pasta made with an alternative grain out there. The brown rice pasta is fabulous, made by Tinkyada. I also really like the spelt pasta. The corn/quinoa pasta is good, but it cooks kind of strange. Some of it will be overcooked, and other times it will be too hard. All of those pastas take a little bit more hand holding. I guess what I mean is you have to cook them the number of minutes on the box or they can be very mushy. Otherwise they are a pretty great substitute for white pasta but I find the rice and spelt pasta tastes just like white pasta but have all the benefits of whole grains! YUM!

I'm actually going to make lasagna tonight with spelt pasta I do believe!

Well, I'm off to my Tai Chi class in a moment, but I did want to post this muffin recipe that I adore. Just finished one for lunch. It might appeal to those of you on low carb diets or non-wheat cooking.

Low Carb Muffins:

2 cups almond meal ( I used 1 1/2 cups of almond meal and 1/2 cup flaxseed meal)

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup (1 stick) butter, melted ( I use land o lakes light butter with canola oil)

4 eggs

1/3 cup water

Sweetener to taste -- about 1/3 cup usually works well ( I used 1/3 cup Splenda)

1/2 tsp cinnamon

1 tsp vanilla

(You could use a 1/2 - 1 cup fresh or frozen fruit)

) Preheat oven to 350 F.

2) Butter a muffin tin. You can really do it with any size, but I'm basing the recipe on a 12-muffin tin.

3) Mix dry ingredients together well.

4) Add wet ingredients and mix thoroughly (You don't want strings of egg white in there and you don't have to worry about "tunnels" when you are using almond meal).

5) Put in muffin tins (about 1/2 to 2/3 full) and bake for about 20 - 23 minutes.

Nutritional Information: Each of 12 muffins has 1.5 grams effective carbohydrate plus 2 grams fiber, 6 grams protein, and 185 calories.

Whole wheat pasta sux. :dead: I tried to like it..... I truly did. But you just can't beat a good semolina pasta.

Carla..... almond meal? Is that like ground almonds?

Well, last night we had steak without carmelized onions, roasted organic beets, and asparagus and bearnaise sauce. It wasn't until I was cleaning up that I noticed the onions were still sitting in the pan. <_<

Tonight my husband is working late so I am making shrimp cocktail over spinach with homemade cocktail sauce.
