Hey happy birthday Jill! Hope you have a lovely dinner celebration :)

Well, I had 2 chicken breasts in the freezer, so I put those in the oven to cook, thinking I might make a chicken pie - but I don't really feel like doing that. I also had a pork tenderloin in the fridge, for pulled pork, so I have put that in the oven too.

Ok so basically i'm just cooking a bunch of meat.

It was horrible.... and nothing like french onion soup. How can you screw up french onion soup? The funny thing is I said to him "I'm going to order the french onion soup, but something tells me I'm going to regret it." lol. Anyhoo.... all was not lost. Hubby ordered the fish and chips and they were fabulous! FINALLY. Real fish and chips. Flipping pain in the neck it's been trying to find somewhere that knows how to make them. We'll be back.

Tonight we are having steak with roasted beets and mushrooms and onions. lol

Are you bbqing that steak??

My husband will. He's the best bbq'er evah. :luv:

I'm not sure what's for dinner tonight. I have a pork tenderloin that is defrosted, but since we had ham on Tuesday, steak that tasted like pork on Wednesday - that would be pork 3 nights in a row. Maybe that stuff last night was opossum or something :)

THIS is miraculous... man.. what is it about the US that they can't seem to make a decent fish & chips? *sigh.. what I wouldn't give for a good fish & chips right about now :)

I think it's a combination of a bunch of things for me. Virtually no one makes the chips right. They're either frozen or "seasoned" (gag). Proper chips are fresh and fried twice. Once at a lower temperature to make the potato creamy and bring out the natural sugars, then drained and fried again at a higher temperature to brown them. And then salted as soon as they come out of the fryer. (And, for the love of God, people..... no fricking "seasoning"! What the heck IS that stuff, anyway? blech!) Also, the fish batter has to be right.... it's most like a tempura batter with seasoning. There's also a tendency for the restaurants I've been to here to just drop frozen prepared fish into the deep fryer and call it fish and chips. blech. It has to be a proper fish like haddock or halibut, and either fresh or thawed if it's been frozen. Maybe I should open a fish and chip shop? :unsure:

I have no idea either.. i made the mistake of ordering catfish one day in SC and NEVER EVER EVER again will I make that mistake .. gross me out to the max.

Thanks all! I had a wonderful birthday, my husband took the day off work and we did some shopping, saw Marley and Me (great movie!!) And went to CPK. It was so good, I got a Tostada which is a Mexican Pizza, emmm yummy in my tummy. The best part of the dinner was me getting carded at the ripe old age of 29 it made me feel young :P

I made spinach and sundried tomato stuffed pork chops last night. I really enjoyed them. Giada had them on her show earlier this week. I changed the cheese in them, did them in the oven after browning for a bit, and DID enjoy the sauce with them. They were a keeper. Leftovers tonight.

So the steak ended up in the freezer for another day. I hadn't been feeling too well yesterday, and by the time my husband came home I felt horrible. No idea what it was/is. So he had the homemade chicken noodle soup I made and I had cream of mushroom soup. Then we had popsicles. lol

Tonight, I don't know. Either spaghetti or lasagna with caesar salad, or Mike's bbq chicken and collard greens. I think I'm leaning towards the spaghetti, since I have a bunch of fresh peppers and shrooms in my fridge.

tee hee... I begged hubby recently when I wasn't feeling well to go out and get me some icecream.. he looked at me and said "would a natural fruit Popsicle do?" (we had some still in the freezer).. we both giggled and then enjoyed :)
