Mmmm perogies. I've got some homemade in my freezer right now. I think I might just go have a few for lunch! YUM!

I almost made perogies today, but then couldn't be bothered.

So we had Boston Market chicken tonight :thumbs:

Omg they are AMAZING! I just had a few (too many) and they were scrum-diddle-ee-umptious!

Well the pizza turned out great. But this is a prime example of my husband cooking, I bought some tin pizza pans last night while out grocery shopping to make the pizzas with today. Well he starts talking about a pizza stone, I have never heard of a pizza stone. So he gets in the car drives over to his grandmas house JUST to get a pizza stone so we can cook the pizzas on it. :lol:

We didn't end up using the tin pans I bought and I personally think that either way the pizza would have turned out the same but Mike insisted that we use the pizza stone to make the pizza.

Hehehe we have a pizza stone and use it regularly. It's great!

We ate out tonight - Mexican - real Mexican, not Tex Mex. We have been eating black eyed peas, pork and collards since New Years' noon (Joe cooks - he makes LOTS of left overs) and while it was good the first two times, it pales by the 4th meal. Only 2 more meals of left over's to go!

They can be a lot of trouble trailmix, but so good! I'm going to make more perogies tomorrow I think!

I have yet to try black eyed peas Kathryn. I hear they're very good though, so I think the next time I shop I'm going to buy some! I saw a great recipe for soup in the crockpot with them! I understand what you're saying about leftovers! My hubby doesn't like leftovers at all, unless it is a favorite meal like curried chicken and red lentils. Then he doesn't mind! So, I either make only enough for one meal, or I eat the leftovers, or I freeze the leftovers, (if that's possible!). That means I've got chili, lentil and sausage soup, and other good things in the freezer when I need a quick meal! YAY! I love batch cooking sometimes, even if it's an accident!

Oh...and real Mexican food... OMG! I'm in LOVE with it! I hadn't had any real Mexican food in Canada and was so excited when hubby took me to our now favorite restaurant. I love their fresh tortilla chips that come with a bowl of beans and salsa. Mmmmm. There are many things I love there. Even their fajitas weren't what I expected. They were WAY better.

This is what we had last night - really good and easy. I skipped the mushrooms and instead drained a can of diced tomatos (didn't want the juice) and added most of those in.

- it's a Weight Watchers recipe so extra vegies or onions would be free - I used Bob Evans Spicy sausage (not so weight watcher-ish :) ) and it turned out just super

Ground Beef and Noodle Bake

6 ounces uncooked medium egg noodles

1 pound ground round

1 cup sliced mushrooms

1/3 cup chopped onion

2 cloves garlic - minced

2 8-oz cans tomato sauce - no salt-added

1/2 teaspoon freshly ground pepper

1/4 teaspoon salt

1 12-oz carton 1% low-fat cottage cheese

1 8-oz carton fat-free sour cream

1/3 cup chopped green onions

2 tablespoons grated Parmesan cheese

1 tablespoon poppy seeds

3/4 cup shredded reduced-fat cheddar cheese - divided (3 oz)

cooking spray

Cook noodles according to package directions omitting salt and fat. Drain and set aside.

Cook ground round and next 3 ingredients in a large nonstick skillet over medium heat until browned, stirring to crumble. Drain in a colander. Wipe drippings from skillet with a paper towel. Return meat mixture to skillet. Add tomato sauce, pepper, and salt.

Combine cottage cheese and next 4 ingredients in a large bowl. Stir in meat mixture, noodles, and 1/3 cup cheddar cheese.

Spoon noodle mixture into a 2-quart casserole coated with cooking spray. Cover and chill casserole 8 hours.

5. Preheat oven to 350° F.

Remove casserole from refrigerator; let stand at room temperature 30 minutes. Bake, covered, at 350° F. for 20 minutes. Uncover; sprinkle with remaining cheddar cheese. Bake, uncovered, an additional 5 minutes.

Yield: 8 servings.

Exchanges: 3 Lean Meat, 1 1/2 Starch. Per serving: Cal 288(24% from fat); Pro 27.2g; Fat 7.8g(sat 3.2f); Carb 25.8g; Fib 2g; Chol 65mg; Iron 3mg; Sod 400mg; Calc 174mg.

This sounds VERY good! You mention covering it and chilling it for 8 hours. Is that part of the recipe or is that if you're making it a day ahead for some reason? Please let me know. Thanks!

I have been trying to make things and eat stuff to clear out my refridgerator. It's crammed still from New Years. We had my in-laws here, and for two evenings, we just had "pickin's". This weekend, we had at least one of those type of meals again, but I really need to take stock of what's in there now, and try and think of some "leftover" recipes for some of the things. I know we do have chicken wings I did up in the crock-pot. Maybe I'll reheat them up, with some cooked cauliflower, maybe curried? Have some leftover rice to eat up as well.

Tonight is soup - started with a canned ready to serve beef vegetable, then added more lima beans, more yellow beans, more beef and more peas and seasonings so it is kind of a legume beef soup. Joe can take the left overs for lunch tomorrow. Probably just have toast or crackers with it - there's enough soup for seconds:-).

Joe's working late tonight so I don't know when he will be home.
