I've got one too trailmix, that's a little bit different if you'd like it. I've made it 3 times in the last 3 days! :P Hubby just keeps coming up with ideas why we need more! :P My recipe uses a little milk and whipping cream instead of butter/margarine.

In fact I would love that - funnily enough, I have a bit of whipping cream and nothing to make with it!

Timeline

Here it is trailmix.

3 large eggs

3/4 cup whole milk (I used half and half cause it's what I had)

1/4 cup whipping cream

1/4 cup sour cream (low fat is okay)

3/4 teaspoon salt

1 1/2 teaspoons baking powder

4 cups all purpose flour

-Mix eggs, milk, whipping cream, sour cream, and salt until well blended.

-Add baking powder and mix until well blended

-Add 1st cup of flour mixing until incorporated

-Add 2nd cup of flour and whisk well

-By now you'll need a spoon to mix in the last two cups of flour, one at a time. Discard that whisk! :)

-You'll notice on the 4th cup that you can't really get all the flour mixed in with a spoon, so use your hands.

-Turn the dough out onto a floured board or counter and knead the dough until it is smooth and shiny.

-If it's sticky add more flour and knead until it doesn't stick to your hands anymore.

I've watched my mom make perogies for years with the flour, oil, water, egg dough and noticed that she has trouble with it. Sometimes it's perfect but other times it's WAY too tough and SO chewy to eat. So I thought I'd give this one a go. It's really good. I've made it three days in a row now and I noticed the first day even though it seemed dry that it was fine for rolling and filling and really good to eat! I learned today though that you really have to keep kneading until the flour is well incorporated. I didn't have quite enough and I had to add flour and knead it right before rolling cause it was sticky.

Oh, one other thing the recipe doesn't mention is that you should let your dough rest for half an hour. I know it looks like a long list of ingredients but it's the best dough recipe I've ever eaten!

Tonight we're having a seafood supper. I indulged and bought: 2 crab cakes, 2 crab stuffed prawns, bacon wrapped scallops and shrimp, a shrimp ring with cocktail sauce, crab and cheese stuffed mushrooms. I'll also put out some raw veggies and dip. Everything just needs to be heated so no work involved.

For tomorrow, we're having a smoked turkey breast, smoked by a local meat market. Cranberry sauce, honey bacon glazed carrots, mashed potatoes, stuffing, and gravy. I made Gene a mini rhubarb strawberry pie.

Yummy.

Awe... really wish we could go out to MO this Christmas.. we are in CT with no family around this year.. so that's a little sad.. I know hubby would like nothing better than be around his family (esp. his kiddos) right now... :(

Just as it's hard for many Canadians here on VJ to be away from their kids, I can see where it's just as sad for your husband to be away from his. And they live in the same country! I'm glad he got to spend some time with them this fall though. I know he has family here in MO, so maybe, just maybe one time you two can coordinate a trip down here when we're here and we can have you two over for supper!

Just as it's hard for many Canadians here on VJ to be away from their kids, I can see where it's just as sad for your husband to be away from his. And they live in the same country! I'm glad he got to spend some time with them this fall though. I know he has family here in MO, so maybe, just maybe one time you two can coordinate a trip down here when we're here and we can have you two over for supper!

Awe thanks Carla... I would really like that!! hubby will have a week with the kiddos in Feb while his ex goes on a cruise (trying HARD not to insert negative comment here).. anyway, so that will be a nice long stretch with the kids.. and they are talking about sending the kids up to CT for a spell in the summer, so I'm really excited about that!! It would be LOVELY to have them here this summer!! :)

We'll keep our eyes open for cheap plane tickets to MO! :)

Thanks so much for the recipe Ateam, I should try it boxing day perhaps!

Well the Mojito steaks (bbq'd) - were really very very good, I had also added a bit of Montreal smoked meat spice - big surprise there. Anyway, it is the best steak we have had since arriving here. My Husband said it would make a really good steak sandwich - and I agree.

So this was kind of funny - he said that last night about the steak sandwich and I said yes - and - we never really have steak sandwiches. He said - I love steak sandwiches. I replied that we have been married over 8 years, perhaps he should have mentioned that sooner :lol:

Then, he said - well everytime we have steak and I say we should have steak sandwiches you say - but we are having potatoes so we don't really need bread with that.

Which is true :lol:

Awww E, you could have trekked up to NH and eaten dinner with us tonight :)

We are having a bastardized version of the Feast of 7 Fishes (because coworkers are coming over and not everyone likes seafood, I added some non seafood things and cut down on the fish and added more shellfish). This is what we are having:

appetizers:

stuffed clams, shrimp cocktail, scallops wrapped in bacon, deviled eggs, veggies and dip, buffalo chicken dip, lil smokies in bbq sauce, stuffed breads (eggplant, spinach, broccoli), antipasto.

For the meal: fried shrimp, linguine with clam sauce, spaghetti with crab and lobster sauce, tilapia.

For dessert: Italian pastries and cookies

Christmas Eve is a bigger deal in my house. Personally, I would just eat leftovers on Christmas Day because I love the meal so much. Hubby wants a Christmas Day meal though so we are having ham, mashed potatoes, baked sweet potatoes, green bean casserole and corn. Not sure about dessert. I might make a pumpkin pie.
