I feel I need to explain how Brian and Vangie's friends are coming here for New Year's too! LOL. Brian and Vangie have friends who live down the street from them and the husband (Peter) has his own company which gets a lot of contracts from companies in the US. Peter has a 7 month contract not far from us here in Florida, so he has been living here doing his contract while his wife (Malou) and daughter (Irene) remain in Canada. Malou and Irene have come down for the Christmas holidays so I have invited everyone to join us for New Year's. With any luck we will have made a new friend with someone here in Florida! Oh, and Peter is from England but lives in Canada so that should be even more fun for me! :)

I am glad you clarified actually !

So you are cooking roast beef in Florida to take to North Carolina for Christmas dinner. That makes me blink.

Yeah. I'm blinking too. What really really annoys me is that there is going to be so much food that it's basically a waste. This roast is to accompany the ham and the turkey and the pork..... not to mention the hundreds of side dishes to go along with everything. It drives me absolutely bananas. But, hey. I'm just an alien. I don't have to understand these people. I just have to play along.

Oh, and my MIL did say I could cook it there but then ..... gah. Forget it. I'm not even going to get into that. It just drives me crazy. Can't wait for it all to be over with.

Yeah...I can see you are trying not to dwell on it and you are probably right - because it would be maddening. It is very nice that you are so nice though! I personally would be staying home.

But I really mean good for you, it probably means a lot to your Husband. :)

I've still too sick to even think about food. It kind of nauseates me when I think of it!

Last night I pulled out of the freezer a quiche I had made a few weeks ago. I had made two at the time. We had a lovely salad with that. I feel badly that I've been so uninterested in food for Gene's sake. I'm feeling a bit better today, but still have no appetite.

I think I might take a ham steak out of the freezer tonight. Maybe just some frozen veggies and some rice with that.

Bah Carla, so sorry to hear you are still not feeling well. I hope today you recover completely...let the festivities begin!

Well it was chilly here in Central Florida last night, so I decided not to BBQ the now famous Mojito steaks, instead Mike brought home some chicken and stuff from Boston Market.

Tonight is Mojito Steak night though - we will have some potatoes with that and maybe some sweet potato as well - and asparagus too I think.

Aww Carla, get well soon :)

We had leftover taco soup last night and a salad. Yummy! Tonight we are bbqing steaks too, although not with a cool mojito marinade :( I think we will have green beans and rice with them.

Mmmmmmmmmmmmm sounds good. I've only had a proper Christmas dinner maybe 3 times in my life. My sister's birthday is on Dec. 25th, and my family has a tradition of the birthday boy/girl getting whatever they want on their birthday. So my sister, to be difficult, requests chicken enchiladas and chile rellenos on Christmas :bonk:

My little brother's birthday is on Dec 25th as well. Thankfully for all of us he likes the traditional Christmas dinner, so that's what we have. We also open all of our presents to each other on Christmas Eve, so that Christmas Day is his birthday instead of just Christmas!

This year we're going to a potluck dinner for Christmas. That will be SO nice. I was wondering what we were going to have just the two of us! So I'm taking some of my homemade potato, bacon, onion, and cheese perogies! YUM!

pecan crusted chicken sounds great!

So for you people who are making home made perogies - what are you using for dough...are you making your own? If so, do you have a favorite recipe?
