We are having a Christmas party tonight. I'm doing a huge pot of Jambalaya, a spiral cut ham, roast beef, turkey, cheese and stuff for sandwiches, veggie plate, chips, dips and hummus, meatballs.

Wow. How'd your party go, MissStacey? Sounds like great fun.

Last night we had citrus salmon, parmesan rice, and sugar snap peas. I have a small pork roast marinating in a mesquite mixture for this evening, which we will have with sweet potatoes and broccoli. I'm trying to get rid of stuff in my fridge before we leave for NC on Tuesday.

Yeah, it's not a very good picture but I'm too lazy to take another. LOL. My husband made a comment last night that he'd better get some of these cookies before they're all gone. :blush: Oh!!! I just took a look in the tin. THERE'S ONLY TWO LEFT!!!!!!! :crying:

Yeah, it's not a very good picture but I'm too lazy to take another. LOL. My husband made a comment last night that he'd better get some of these cookies before they're all gone. :blush: Oh!!! I just took a look in the tin. THERE'S ONLY TWO LEFT!!!!!!! :crying:

What happened to the picture! We look like we are talking about imaginary cookies here - although since there were only 2 left they may well be imaginary at this point!

They looked delicious, just that there weren't very many left so the scuffle thing was you and your Husband racing for the cookies...although that apparently was not the case :hehe:

oh the pic is displaying now - at least you will have that so show him.

We went out for lunch on Saturday, just before I got sick. Had a chicken salsa sandwich wrap with slaw, that was very good. Yesterday was some homemade chicken soup. I have no appetite and can't taste much right now anyway with my cold. I do feel for Gene though. Last night he made himself a stir-fry.

We had beans and toast last night, that was good.

So yesterday I have this brilliant idea (maybe) - we have these Mojitos in the fridge, they have been there a few months because we rarely drink - I just like to have drinks available should I decide I want one - we have a bottle of wine too and we really don't drink wine :lol:

Anyhoo I decide to open up a bottle of the Mojito and use it as a marinade for steak. After tasting it (i've never had one before) and as it is a Mango Mojito - it would probably be a good marinade for pork or chicken.

Guess we will see at dinner time!!

I have just finished cooking a beef roast and am protesting that the house shouldn't smell this good so early in the day. My MIL asked me to bring a roast for Christmas so I am cooking it here, slicing it, then pouring on the gravy and freezing it to take with me tomorrow. Normally, I would not have done it this way but they eat differently than I do so I have adjusted what I do to please the majority.

Last night's dinner was a huge hit! I had marinated a pork roast in a mesquite mixture, then slow roasted it in the oven. After reading Cat's thread about side dishes, I remembered that my husband had absolutely loved a corn casserole that his cousin had made on Thanksgiving, so I made that to go with it, as well as some steamed broccoli and a baked sweet potato. Well, neither of us had room for the potato so that's back in the fridge. Plus I went ahead and made a batch of cranberry blueberry bran muffin mix so that I can scoop it out and make fresh muffins when I have everybody over on New Year's. My friends Brian and Vangie are arriving from Canada on the 30th. On the 31st, their friends and daughter are joining us for New Year's Eve celebrations and everyone will be crashing at my house. (Just like the old days! LOL) So I'll bake some muffins to go with the other brunch ingredients on New Year's day.

Gah. So much to do. I can't believe I'm sitting here talking to you guys. :lol: Tonight we are having leftovers.

Actually, I thought that sounded awfully good! lol

I feel I need to explain how Brian and Vangie's friends are coming here for New Year's too! LOL. Brian and Vangie have friends who live down the street from them and the husband (Peter) has his own company which gets a lot of contracts from companies in the US. Peter has a 7 month contract not far from us here in Florida, so he has been living here doing his contract while his wife (Malou) and daughter (Irene) remain in Canada. Malou and Irene have come down for the Christmas holidays so I have invited everyone to join us for New Year's. With any luck we will have made a new friend with someone here in Florida! Oh, and Peter is from England but lives in Canada so that should be even more fun for me! :)
