So today is the beginning of my meatless venture. I am having perogies tonight because my original dinner plan of crispy fried tofu with a three bean salad fell through because I am just too damn tired to cook from shopping all over the place today.

MMM I LOVE perogies I'm having them for dinner too!! I usually fry them in the pan with some onions and they are really good dipped in salsa! You should try the Wegmans store brand perogies, they are the best yet I've ever had. Thick and stuffed!

I was going to get the wegmans store brand! Dammit now I wish I would have. :(

Get them next time! I got the cheddar cheese ones, I've eaten alot of perogies and Wegmans are the very best!! Actually I got alot of store brand food at Wegmans and it was all pretty good, Wegmans is my new favourite grocery store!

Man....I kinda wish we had a Wegman's here now. I've never found a store bought perogy that I liked. I guess that's cause my mom's homemade ones have spoiled me! :P I've also never panfried a perogy in my life either. It sounds like it would be good.

I always boiled or steamed my perogies but most people I know pan fry theirs. I shall try it.

Makes sense, you're eating all those carbs, you might as well go all the way and fry the buggers too. :P

I used to boil mine but found them to be a bit soggy and sometimes the filling would come out. I was probably doing it wrong mind you :P Usually to pan fry the directions say to soak them in HOT water for about 3 minutes. Then I use a bit of vegetable oil and fry up the onions first, then add the perogies and cook on each side for about 4 minutes, until browned. I put old bay seasoning on mine and add some soy bacon bits in there, sooo good. Then I dip them in light sour cream, salsa, or sometimes ranch dressing!! They are nice and crispy pan fried!

Joe made his pot of red beans with salt pork and jalapenos; fried corn pancakes with onions, and then stirfried potatoes, carrots and cabbage together with seasonings - actually, pretty darn good - and filling - and like always, we have enough to last the rest of the week! We had BBQ'd ribs, salad and potatoes. These ribs were really really good, surprising to me because i'm not usually a big fan of them, they were uncooked - but pre-seasoned when we bought them.

Now i'm making baked apples, haven't had one in ages.

We had red lentil curry, with chicken, brown rice and cauliflower and chickpea korma. YUM! I'm not sure if you'd actually call it a korma, but the cauliflower and chickpeas were cooked with curry and a little bit of half and half. SO good.

ok so tonight it was one of those roast chickens from the grocery store.. they have a deal where you get the chicken , 4 of those Hawaiian dinner rolls and a pound of pasta sald or potato salad for about 7 bucks... plus I got another pound of bow-tie Italian-type salad that we both love...mmmmm it was a yummy dinner..

tomorrow night I plan to make this casserole thing with ground beef... you fry up some meat and then add some salsa and a can of soup.. the recipe calls for Fiesta beef something or other soup but I never can find it so I just put in a can of vegetable beef soup and then you add a few other things and throw it in a baking dish and then mix a box of corn bread stuff and throw that over top and bake in the oven... I have made it a few times and the hubster likes it, as long as I use the right kind of corn bread mix.. he doesn't like the jiffy mix....

Wow, since I don't post on the weekend, I had lots to catch up with on this thread. Yummy! I saw perogies, and I thought mmmmmmm, I'll have to make some. We don't have a Wegman's, and homemade are better.

We had baked cod on Friday night, we went out for a steak dinner at Tucker's on Saturday night, which was incredible! Last night I cooked up a corned beef, and we had Ruebens and salad. Mine was minus the sauerkraut.

Tonight I'll make...I don't know. :( I think some pasta?
