Timeline
Gong to costco today to pick up my Xmas photo cards ($15 for 50 cards and envelopes, ready in less than a day!!!) Pick meself up a pizza, yummy! And of course have to get a hot dog for lunch!!

That sounds good!! Unfortunately not in the 'real foods' eating plan :hehe:

Last night we had fried rice that I made, it was really good.

Absolutely no idea what is for dinner tonight.

Ok, I made these Onion Rings once before, when we were living in the apartment, but I didn't really get the crumbs small enough and they were - kind of ok.

I'm going to try this again tonight (except I don't use eggbeaters, i'll just use an egg)- because I now have my blender - low calorie and low carb btw:

These delicious, baked, oniony treats are a dead ringer (c'mon, what did you expect?) for the fast food version. Ok, we lied -- they're much better! Instead of sucking down a greasy, oily, caloriefest of a side dish, chew a few of these crispy & crunchy circles of love (er, onions), courtesy of HG. They couldn't be easier to prepare...or more delicious!

Ingredients:

1 large onion

1/4 cup original Egg Beaters**

1/2 cup crushed Fiber One (cereal)

Directions:

Preheat oven to 375 degrees. Cut edges off onion, and remove outer layer. Cut onion into 1/2 inch wide slices, and separate into rings. Next, fill a small bowl (just large enough for onion rings to fit in) with Egg Beaters. Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Pour crumbs onto a small dish. One by one, coat each ring in egg and then crumbs (give each ring a shake after the egg bath). Place on an oven-safe baking dish sprayed with nonstick spray. Cook for 20-25 minutes, flipping rings over about halfway through. Serves one!

Serving Size: 15 rings; one recipe

Calories: 153

Fat: 1g

Sodium: 225mg

Carbs: 41g

Fiber: 16g

Sugars: 7g

Protein: 9g

The onion rings were great! Me and my husband both loved them. I used red onions because I already had some around and I used a different high fiber cereal that I got at Whole Foods.

I will definitely make these often!

I made them too, so much better than the last time I made them - when I was trying to crush the cereal manually!

We had hamburgers and salad with them, I had put one extra hamburger on, as they are quite small, but when my Husband was manning the bbq one dropped through :hehe:

mmmmmmmmm bbq....way too cold here to bbq :(

Today I had a ham and cheese lean pocket and some salt n vinegar chips for dinner. A mix of healthy (kinda) and not. With a tall glass of water. Oh and a bowl of Honey bunches of oats later for a snack. And just now I did a quick 20 min workout on the wii fit, no run today though. I feel bad about missing it :s

I should definitely try those onion rings for Buddy. Hed love em.

Hubby was wonderful and went to the store to get the fixings for this for me, and then he came home without the bag of onions or cereal. :( *sigh.. that was disappointing.. so we made the olive chicken thingy and I warmed up some leftover veggies in the fridge.
