Hey Carla, what kind of breadmaker do you have? I'm always interested in how the different models/brands work. I haven't tried to make bread with flaxseed meal or almond meal as the main ingredient. I always add flaxseed meal to my spelt bread though. I'm not sure exactly what kind of recipes you'd like, but I've got all kinds from Gruyere and Walnut Wheat Bread, Sundried Tomato and Mozzarella, as well as Rustic Italian Loaf. There are quite a few different artisan type breads. They have some low carb recipes as well. The low carb recipes still use flour, but it's usually a very small amount of whole wheat flour, barley flour, or oat flour. There are quite a few low carb options including cinnamon bread, nutty loaf, and low carb seed bread to name a few. The measurements are different depending on the size of loaf you want to make as well- 1 1/2 pounds or 2. (Medium or large) Anyhow, let me know if any of those sound interesting and I'll post the recipes for you.

Do you have a low carb setting on your bread machine?

I have a Toastmaster bread maker. No low carb setting. You have awesome recipes! Did you get that with your breadmaker or did you buy a book? I prefer low carb...or want to try those anyway. The almond meal and flaxseed meal I was told could subsitute for any regular flour, however I too have heard that some recipes might call for a small amount of whole-wheat flour with them. The seed bread might be something to try if you could post that here. Or you could message me with the recipe, since I don't know how many people are really interested in that kind of recipe. Thanks so much!

I went to start the BBQ for the sausages and the darn thing won't start!

Anyway, they are frying now and then I will make the pasta and Alfredo.

I also have this loaf of bread in the breadmaker, should be done soon:

Spinach Bread from allrecipes

INGREDIENTS

1 cup water

1 tablespoon vegetable oil

1/2 cup frozen chopped spinach, thawed and drained

3 cups all-purpose flour

1/2 cup shredded Cheddar cheese

1 teaspoon salt

1 tablespoon white sugar

1/2 teaspoon ground black pepper

2 1/2 teaspoons active dry yeast

DIRECTIONS

Place all ingredients in bread machine pan in the order recommended by the manufacturer. Select white bread cycle.

Please let us know how the spinach bread came out!

this was my dinner tonight... well, this is actually a pic of my hubby's plate that is now waiting for him in the fridge.. I was a little tempted to eat his meatballs too .. :whistle: ..lol

is there a rule where you have to have vegies at every meal?? :lol: there are onions in the sauce :P

and the only vegie i had in the house right now was corn and that wouldn't go well with that..

Hey Carla, I got the recipes in my instruction manual. They've got TONS of recipes. I'll post a few recipes for you. This recipe is for a 2 lb loaf. Let me know if you need 1 1/2 though.

Low-Carb Seed Bread

Water, 80-90F 1 cup + 3 tbsps

Heavy Cream, 90F 4 tbsps

Splenda 1 tbsp + 1 tsp

Salt 3/4 tsp

Flaxseed oil 2 1/2 tbsps

Whole wheat flour 1 1/4 cups

Almond flour 1 cup

Oat flour 2/3 cup

Brown rice flour 2/3 cup

Vital wheat gluten 1/4 cup

Flax seeds 2 1/2 tbsps

Sesame seeds 2 1/2 tbsps

Poppy seeds 2 1/2 tsps

Yeast, active dry, instant or bread machine 2 1/4 teaspoons

Place ingredients, in order listed (or whatever order your breadmaker recommends), in the bread pan fitted with the kneading paddle. In my understanding the difference between the low carb cycle on my breadmachine and the regular cycle is that the kneading and rising time is a lot less. For instance, the first knead was only 13 minutes instead of 28. Also the first rise is 15 minutes instead of 80. The second rise is 75 minutes instead of 31. Also, there is no third knead or rise like in regular bread. The baking time is also a lot longer at 85 minutes instead of 55.

Nutritional info: Serving =1 ounce Calories 80 Carbs 10g Fiber 1g

This recipe might be difficult in your bread machine without the low carb function, but if you can time the cycles and change them it would probably work. Also, I'd probably play around with the seeds. I love sunflower seeds in my bread! Let me know if it works out. There are an awful lot of different flours in this recipe, but the oat flour can be made from rolled oats, just ground and processed, so you don't have to buy it specially! The vital wheat gluten you may have to go to a health food store for. I'm pretty sure that you can find it at Whole Foods if you have one.

Joe's working from home today because we have evening plans in Atlanta tonight (saves the double drive), and he offered to make dinner. So, tonight we're having lentil stew with carrots, potatoes, tomatoes, cabbage and onions. He really enjoys cooking - he just makes enough to last two of us all week, which would be fine except I get bored eating the same thing day in and day out:-).

So tonight, it will just be roasted potatoes and the same sausages we had last night, they were really good but the alfredo overpowered everything - so I decided we should have them again!

I also made a key lime pie - having no key limes I used regular limes, using this 'traditional recipe'. Marilyn, I don't think there is a rule about having a vegetable...perhaps Carla was pulling your chicken leg?

Key Lime Pie by GourmetSleuth

This is a recipe for "real" Key Lime pie. Real Key lime pie is not green and it does not have a soft "pudding" texture. The pie gets its true pale yellow color from the egg yolks that predominate the ingredient list. And the texture is a "firm custard".

Be careful that you don't over-bake the pie or it will be "rubbery". For best results use fresh Key Limes, not bottled juice. The traditional preparation does not put any meringue on the top of the pie. This is a very simple recipe and only takes a few minutes to prepare and 12 minutes to bake.

Servings: 5 - 6

(I used a pre-prepared graham crust and just made the filling below)

Pie

4 large or extra large egg yolks

1 14 ounce can sweetened condensed milk

1/2 cup fresh key lime juice (approximately 12 Key limes)

2 teaspoons grated lime peel, green portion only

Pie Filling

Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don't over mix. Turn the mixer off and add the sweetened condensed milk. Turn speed to low and mix in half of the lime juice. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds). Pour the mixture into the pie shell and bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs.
