Thanks for that recipe for pastry Carla, I will copy it and use it next time I make a meat pie!

So I did try krikit's pizza dough recipe last night and it is really good! Pics below and no - the pizza isn't lopsided, it is rustic

Oh the only thing I changed was the honey, I didn't have any so I just added a dash of sugar. This makes one good size pizza crust.

I made the dough in my breadmaker on the dough setting - I really really like this bread maker I tell you!

3 1/2 cups flour

1 cup warm water

2 tablespoons yeast

2 tablespoons honey

1/4 cup olive oil

1/2 teaspoon salt

Hubby made chicken soup because I am trying to get over a cold and he is feeling one beginning. So that is what I am eating, although, unfortunately, it is not very good. Hubby was a little heavy handed with the black pepper. On the positive side, it should clean out my sinuses! Normally, hubby is a good cook, but I think was distracted by the baby today.

I made a crab and chives quiche for dinner last night that turned out really, really good. I usually have good luck with my quiches but this one was really good:-). We had home made chicken soup with wild rice tonight. It was good too and I have lots left over for tomorrow:-) . . maybe make grilled cheese sandwiches to go with it.

Kathryn, you should post that quiche recipe! It sounds quite yummy, and I'm always up for trying my hand at quiche making. :)

Tonight's dinner is homemade beef stew, braised with beer. Num!

Crab Quiche

(You can also use a frozen deep dish pie shell - bake empty according to instructions - be sure to ####### pastry with fork first)

Foolproof Crust:

1/4 pound butter, softened (or margarine)

1 cup flour

1/4 tsp salt

Cut flour and salt into butter and mix until a ball forms. Pat dough with hands into a 9" pie plate. Flute edge. ####### generously and bake at 400 F. for 7 minutes.

Filling:

1 7 oz tin crabmeat

1/2 cup chopped chives

a Tbsp Mrs. Dash's Spicy Blend

1 1/2 cup grated cheese (Swiss or Emmentaul is best; any cheese works)

4 eggs

1 1/4 cups milk or light cream (I had no cream this time so used 1% milk)

Spread crabmeat evenly around bottom of baked pie crust;

Sprinkle Mrs. Dash's spicy blend over top

Spread chives over top

Spread 1 cup of cheese over top of crab and chives mix

Beat eggs until smooth and add milk to egg mixture. Mix together until blended

Pour egg and milk mixture over crab mixture in pie plate

Sprinkle remaining cheese over top of mixture in pie plate.

Put pie plate on a cookie sheet and bake in a 400 F oven 35 to 45 minutes - test for doneness with a toothpick - a toothpick inserted in the center should come up clean. Pie should be a thick, solid custardy filling when done, and browned on top.

If crust starts to brown too much before center is done, cover the crust with strips of tin foil making sure the center isn't covered.

Let cool 5 to 10 minutes before cutting. Serves 4 to 6.

I should add that you can use anything else in the filling instead of crabmeat. It is a great way to use up leftovers - a variety of vegetables work, ham, bacon, spinach, anything you like, really (spinach quiches are wonderful!) - just fill the pie shell and pour over the egg and milk mixture and cover with cheese. Sometimes I even put the cheese in first, especially if I am just using vegetables. You can also do straight cheese - or use a variety of cheeses. It's really versatile and it's all good!
