I had a Dr.'s appointment yesterday and was late getting out. It was so warm here by the afternoon and I was feeling better, so I didn't make soup for supper. Undecided on what to still have, I went to Costco and ended up getting a roasted chicken. It was still warm when we ate, and we had potato salad with it, and cauliflower with cheese sauce.

I have some leeks in the fridge, so I'm thinking maybe a #######-a-leekie dish, but I'm not sure yet. I hate being so undecided about meal planning. This is really not me!

So why are you undecided? Perhaps the change of season, hard to decide if hardy or cool would make a better dinner?

We had Kraft Dinner (Canadian) and bread for dinner. This is the kind of dinner that is a favorite of my Husband's.

Tonight I don't know - meat, potatoes and beets I think.

I've been eating so much Thai food lately. The restaurant has opened, but they keep asking hubby to do extra things, so we have been there every evening. Last night, I had summer rolls and drunken noodles, hubby had green curry. It was yummy, but I think I have overdosed on Thai food. Tonight we are having chicken and some kind of veggie.

We had a nice simple meal last night - tomato Parmesan soup, ham and cheese croissant sandwiches and Caesar's salad. Joe made a pot of butterbeans stewed with green tomatoes and ham tonight, so we had grilled cheese sandwiches this time to go along. Quick and easy.

there is chicken in my fridge that has been marinating since last night..

it was just a simple marinade consisting of, light zesty italian dressing, brown sugar (was supposed to be honey but I didn't have any), Worcestershire sauce, lime juice (was supposed to be lemon juice) and paprika...

will serve it with some corn and a rice-a-roni packet...

I'm roasting beets for the borscht I'm making tonight! YUM! I'm so excited. That's one little bit of Ukrainian cooking I'm not too bad at. I do cabbage rolls not bad either, but I haven't tried homemade perogies yet. They kinda scare me! :P

Thinking chicken (haven't decided how to dress it yet) and homemade green bean casserole. I found a recipe in Cook's Illustrated that I'm dying to try out :)

mm, I really like borscht but not the kind with the beets in it...

I love cabbage rolls and perorgies too.. perorgies are not too difficult to make.. they are more time consuming then anything....

I love Borscht and cabbage rolls!

Tonight we're having cold sliced ham, left over speckled butter beans simmered in ham and green tomatoes, corn on the cob and Spring lettuce salad.

chicken souvlaki and cous cous tonight. I am pretty much off most of this week because my son doesn't have school this week (NJ teachers conference) so I'm trying to be a bit more creative with dinners. :)

Donne moi une poptart!
