Timeline
We had some friends over for Games Night and just made appetizers. I made the buffalo chicken dip and also lil smokies in bbq sauce (in the crockpot). Friends brought cheese and pepperoni and crackers and a veggie tray. Oh yeah, I also made chocolate chip cookies. I am stuffed!!!

And .... we played Cranium and hubby and I kicked azz!!!!

Me too!!! I love love love it :) Except for the Humdingers. I am tone deaf so anytime I try to hum a tune, it sounds right in my head but SO BAD out loud.

To accompany my turkey tenderloin yesterday I made a wonderful new casserole. It's a gratin, with cauliflower and carrots, with extra sharp cheese, bechemal curry sauce. Anyone wishing the recipe let me know. It was spectacular and a lovely change from the usual. Nice to make for a special occassion.

Well yesterday I decided we would have turkey tacos and salad - so I made up the turkey in the afternoon and I was finished and just about to put it in a bowl and lo and behold the dumb frying pan we bought had teflon peeling off it! So turkey goes in the garbage. (It was just an inexpensive pan we picked up as I wanted to shop around for new cookware - have now just purchased a T-FAL set).

So we ended up having some of that ham I cooked a couple of weeks ago, potatoes and corn.

Tonight, since my Singapore curry gravy has been in the relocube - we will be having beef curry with rice!

We were at Gene's work picnic yesterday. It was good. Lots of good salads. I made a tabouli salad...one guy said...is that tabouli yours? I said yes...he said, "ah! the tabouli queen is here!" I later said to Gene, that even if his co-workers liked it, maybe I should bring something else to a potluck? :lol: So, we weren't that hungry at suppertime. Just cleaned my fridge out, and heated up some leftovers.

Tonight I think some rainbow trout.

Oh Carla,..I have not had a good tabouli since I left Australia...do you have a recipe you could share for it?

I am making shrimp Gumbo tonight,...yummy!!

Sorry jodee for just seeing this now! My tabouleh I make with either bulgar wheat, or couscous. I really like the couscous. I boil a 1/2 cup of water with 1/3 cup of lemon juice and 2 tbsp. of olive oil. Throw in a package of couscous (1 cup), take off heat and let sit for 5 min. Meanwhile I mix up the veggies. Usually...grape tomatoes split in two...at least 1/2 a carton, or instead you can use regular tomatoes, about 3 cut up. I use a couple of small zuchinni cubed, and/or 1 english cucumber, and 1 small onion, or a bunch of green onions tops included. One tsp. of minced garlic as well. The spices I use are about 2 tsp. coriander, 1 tsp. cumin, I don't use mint because I don't like it in this recipe...but you could add some mint leaves. Salt and pepper to taste. 1/2 cup of parsley as well (dried). About 1 cup fresh cut up finely. I actually don't measure out the spices, but this is what I think approximately the amount I use is. I mix all the veggies, spices and couscous together, then pour another 1/3 cup of lemon juice on it, and another 2 tbsp. of olive oil. Refridgerate.

I like to have it sit in the fridge all day, or better yet, make it a day ahead.

i made this chicken the other day.. hubby told me that I definitely had to make it again and gave it an A+..

it was so yummy and tender and juicy... mmmmmm.. the two pieces I had were not enough... :P

Oven-Fried Garlic Chicken Recipe

* 2/3 cup breadcrumbs (I used Italian bread crumbs)

* 2/3 cup grated Parmesan cheese

* 1/4 cup minced fresh parsley

* 1/4 teaspoon salt

* 1/8 teaspoon fresh ground pepper

* 5 tablespoons butter or margarine

* 3 cloves garlic, minced

* 3 lbs chicken, cut up

1. Preheat oven to 350.

2. In a shallow bowl, blend together bread crumbs, Parmesan cheese, parsley, salt, and pepper.

3. In a small saucepan, heat butter and garlic over very low heat until butter melts.

4. Remove from heat.

5. Brush chicken pieces with garlic butter, then roll in bread crumb mixture to coat.

6. Place chicken skin side up on a large foil-lined baking sheet.

7. Mix together any remaining crumb mixture and butter and sprinkle over chicken.

8. Place in oven and bake for about an 1 hour. (I baked them for about 40 minutes)

The timeline... (Frankfurt) for the kids visas

10/22/2007 Filed I-130 x 2 in person + paid 710 USD (355 each )

10/22/2007 Filed DS-230 part 1 x 2

10/22/2007 Received the document checklist and FRN (case) numbers

12/18/2007 I-130 petition approved, but I didn't know. I was away at the time, didn't get confirmation letters til I got back from the states.

12/20/2007 Notice of Approval arrives in tha mail. According to the date received stamp on back of envelope at my post box.

Will now wait til hubby is back from Iraq to fax in checklist readiness, even though, I have been ready since day of lodging I-130's. all except medical.

02/18/2008 Faxed the "checklist" back to the consulate.

02/25/2008 Medicals completed.

02/25/2008 Appt letters in mail for appt on March 7th. Cant go due to prior military commitments. Emailed consulate and received an amended appt date of March 12th 2008.

03/12/2008 Visa interview - APPROVED x 2

03/27/2008 Visa's finally generated. I emailed the consulate. they apologised for the delay. They forgot to issue the visas after approval.

03/31/2008 Received visas

04/26/2008 Flying out of Frankfurt to next duty station on orders.

Nice!

Last night we had fresh cod with parsley potatoes, steamed peas, and julienned carrots, celery, and spring onions with a parsley dill sauce. Tonight I was thinking we might have teriyaki chicken with rice but I'm not quite sure about that yet.
