speaking of easy meals I found this one the other day.. now I want to try it...

Super Simple Stunning Quesadillas

* 2 Chicken Breasts ( Boneless - sliced )

* 4 Flour Tortillas

* 1 Medium Red Onion

* 2 Tbsp Olive Oil

* 1 Clove Garlic

* 1 Tbsp Taco Seasoning

* 1 Cup Sliced Mushrooms

* 2 Cups Baby Spinach

* Sprinkle Red Pepper Flakes

* Shredded Cheese ( Cheddar, Mozzeralla, Monterey Jack)

1. Preheat Oven to 350 Degrees Oven

2. Preheat Frying Pan and add the olive oil

3. Once ready, add red onion, garlic and red pepper flakes

4. Stirring often, cook mixture until onions become translucent - then add the mushrooms

5. Continue cooking until mushrooms release their liquid and begin to brown - then add the chicken

6. Once the chicken is cooked through and no longer pink - add taco seasoning and water and allow sauce to thicken. Once thickened, then add the spinach and toss through

7. Ready to prepare the quesadilla, Lay parchment paper on cookie sheet and place one tortilla on top, Then spoon the mixture on top of the tortilla evenly

8. Now Sprinkle cheese over evenly ensuring that you have cheese on the edges to allow the tortillas to stick together.

9. Place other tortilla on top and bake in the oven for about 10 minutes or so or until cheese is melted and the tortilla is golden brown. Take out of the oven and serve.

*the filling is enough for two quesadillas

I have been craving a full-on Sunday dinner for quite a while now, so tonight we are having:

Roast beef

Yorkshire puds

Roast potatoes

Gravy

Carrots & parsnips

Hmm. I just had a craving to include brussell sprouts as my green veg. Or maybe I'll just have peas. I'll have to think about that. lol

I have been craving a full-on Sunday dinner for quite a while now, so tonight we are having:

Roast beef

Yorkshire puds

Roast potatoes

Gravy

Carrots & parsnips

Hmm. I just had a craving to include brussell sprouts as my green veg. Or maybe I'll just have peas. I'll have to think about that. lol

That dinner looks so good krikit, so good in fact that you should post a picture!!

Not sure what's for dinner tonight, but I am going to take something out of the freezer soon. Last night we had some frozen waffles lol - rather pathetic but we had a frozen pizza around 4ish, then got to playing world of warcraft, only thing handy was the eggos to kind of grab and eat :lol:

I think what I would like for dinner is some pasta - so maybe meatless tonight.

We do that too.... if we have a late lunch we'll just have something snacky a little bit later on. On Friday we went to the movies (at the AmStar in Lake Mary) so I had some old cheddar (which I'd brought from Canada) crackers and grapes, with a glass of wine, just before I went to bed. OMG, I had nightmares ALL. NIGHT. :o It was horrible. Next time I'll have cereal. :lol:

The timeline... (Frankfurt) for the kids visas

10/22/2007 Filed I-130 x 2 in person + paid 710 USD (355 each )

10/22/2007 Filed DS-230 part 1 x 2

10/22/2007 Received the document checklist and FRN (case) numbers

12/18/2007 I-130 petition approved, but I didn't know. I was away at the time, didn't get confirmation letters til I got back from the states.

12/20/2007 Notice of Approval arrives in tha mail. According to the date received stamp on back of envelope at my post box.

Will now wait til hubby is back from Iraq to fax in checklist readiness, even though, I have been ready since day of lodging I-130's. all except medical.

02/18/2008 Faxed the "checklist" back to the consulate.

02/25/2008 Medicals completed.

02/25/2008 Appt letters in mail for appt on March 7th. Cant go due to prior military commitments. Emailed consulate and received an amended appt date of March 12th 2008.

03/12/2008 Visa interview - APPROVED x 2

03/27/2008 Visa's finally generated. I emailed the consulate. they apologised for the delay. They forgot to issue the visas after approval.

03/31/2008 Received visas

04/26/2008 Flying out of Frankfurt to next duty station on orders.

last night we had Kraft dinner with hot dogs in it and corn on the side.. it was quite yummy... I have been buying the Kroger brand of mac and cheese and I think it taste better then the Kraft macaroni and cheese down here...

this morning we had popovers, hash browns and sausage... and for dinner we are having turkey burgers and corn on the cob.. yum yum..

Kind of having left overs tonight - left over macaroni and cheese from last night; last of the cooked ham, tomatoes from the garden and the last of the corn on the cob. I'm full! Oh, and I guess we'll have the last of the strawberries for dessert.

Might cook up the other ham steak I bought a few weeks ago. Went to the farmer's market this weekend, and have a TON of veggies to polish off.

We ended up having spaghetti with garlic toast last night.

Oh I don't know if I mentioned - we picked up some BBQ sauce a couple of weeks ago - Bullseye Original, big lettering on the front stating - No High Fructose Corn Syrup! I thought that was great!

Also, found some Boysenberry Jam the other day at Target - unfortunately it is far far too sweet.

Funny you should say that. We were in Sam's Club the other day and I saw some English muffins with that as a marketing initiative on the package: "Does Not Contain HFCS!" It's nice to see there's been a breakthrough.

I make my own BBQ sauce and get requests for it from people all the time. :luv:

Tonight we are having beef and barley soup. I made it using some of the roast beef we had for dinner last night. (Sorry, Trailmix. Forgot to take the pic. <_< ) My husband is working late tonight and he prefers something which won't sit heavy on his stomach so late in the evening.

We are going to have hamburgers and fries for dinner, they are on the way as I type this!

I'm hungry. Funny how when you get in organizational mode all the reg stuff stops happening, like getting something to eat :huh:
