tonight's dinner is barbecued chicken drumsticks... I put a little mustard on the chicken and then sprinkled some homemade chicken rub on them.. .. they smell good already and they are not even cooked yet... we are going to watch a movie while they are sitting in the the rub and will bbq them later.. going to serve some pasta roni with them...

the rub was chili powder, paprika, cayenne, onion powder, garlic powder, cumin, coriander, oregano, basil, salt, pepper.. and then I mixed in a little brown sugar....

Well, you slice it in about 1/2 inch pieces. You have to have a hot grill. You peel it. Make a little mixture of balsamic vinegar, some olive oil, herbs that you want...say, some oregano, thyme, basil, salt, pepper...whatever you want. Brush this on both sides of your eggplant, and put it on the grill. Continue to brush on while it's cooking. Cook maybe 5 or 6 minutes on each side.

I often make up a medly of vegetables consisting of whatever is in my fridge at the time for grilling. We have a grill basket. Often times I'll see eggplant at the store, and my mouth waters for grilled eggplant. Mmmmmmmmm

I like the smaller tubular eggplants for the grill basket.

Enjoy your eggplant sandwich!

Does this make the eggplant non-spongy - the grill? I can't stand the texture of eggplant, but I haven't grilled them.

We had really good ham for dinner last night, I haven't baked ham on the bone for a long time, but I really do find the taste superior to other hams.

We had broiled fish, potatoes and carrots. I felt virtuous and healthy afterwards and then blew it all by eating a big bowl of ice cream :lol:

I did that the other night too! Made a lovely light meal of shrimp, bok choy, and rice..... then had buttertarts for dessert. :blush: But now I'm not happy with my husband because he'd never had buttertarts before so I gave him one the last time I came back from Canada and he said he didn't really like them. On Sunday he suddenly proclaimed that he loved them..... but I only brought one package back. :bonk:

And i'm not crazy about peas but when I was cutting the ham up last night I said, this stuff i'm leaving behind would probably make great soup stock and Mike said - nice ham and pea soup!

Then we proceeded to throw that in the garbage. I have never made soup from scratch :hehe:

Ok, I have a question! The bread here (I mean like the sara lee and the wonder bread and pretty much ALL bread that is packaged in a plastic bag that is sitting on a shelf) - what is in it.

When you open the bag it has that 'smell' - I have no idea what it is - it is so off-putting and the taste stands behind it too.

I am now officially boycotting ALL but some in-store bakery bread. I don't know how people here can stand the other stuff - whatever is in it is just gross.

I gave up on American bread about the same length of time it took you to. :lol: I now bring it from home and freeze it. There is one bread I've found, however, that tastes and has a texture most like the fibre bread I ate at home. It's available in Walmart and is called "Arnold Natural Wheat Bread - Original Brownberry Recipe". No HFCS's to be found at all. Yay. :dance:

Homemade soups are divine! Although I've never made ham and pea soup, because I've never had a ham bone, nor do I like peas in soup if that makes sense. :lol: However, yesterday Gene was home sick, and I made up a pot of homemade chicken soup. I freeze chicken stock for just this purpose! Grilled up some chicken breasts for the soup, and an array of vegetables. It was very good.

I don't eat packaged store bought bread. I go to St. Louis Bread Company, Breadsmith, and a few local bakeries around here. We love whole grains, sunflower seed, multigains, flax etc. breads. It has meant we've cut down on our bread eating I think, which is probably a good thing.
